Wish I'd seen this video first, before I sat through ones that were not nearly as clear, thorough, and straightforward as this excellent intro to the egg. Got this one bookmarked to use as my go-to guide from now on. No loud music, no goofy camera tricks, no infomercial BS- just solid instruction, presented clearly and pleasantly. For ease of cleaning, I purchased the BGE charcoal basket. Makes cleanup a breeze. The day after a cook, I take the basket over Tom a lined trash can, give it a good shake, and all the fine particles fall into the trash. Remaining lump is ready to be used in next cook. Minimal ash gets to the bottom.

I've had my egg for years. Use it a lot. The tip you gave about placing the top regulator in the egg while it cools is great. Not only does it does it clean off the regulator but it provides storage for the top regulator. My wife let me buy the egg for my 60th birthday sixteen years ago, and it's had a lot of use.

These are all good tips. I bought a cast iron plate setter after the first one fell over and broke. Look at Kick Ash basket and ash pan to really make cleaning out the egg a breeze. I put my smoking wood in first and then add charcoal to allow the top to light and burn the smoking underneath.

I've been cooking on the Large Big Green EGG for many years . Infact they've made improvements on the hinge and handle in the last few years . The older version was a handle about 5"s wide with an inherent design problem. They didn't have the tabs to hold the lid to the steel framed hinge and without warning the lid would slip out when opening and hit the frigging driveway! If you have an older large BGE order the new handle, hinge assembly . I busted 2 lids ,they must've had problems because they fixed it ! This is the best smoker, bbq cooker on the market . Pellet grills won't give you a smoke ring and flavor the meat. There's no place to put chunks of pecan,oak or hickory in a pellet . 1/2 the thrill of que-in is tending to the grill, if you like the idea of dumping pellets in the hopper and walking away God bless !

Your channel deserves so much more attention. And thank you for this! My parents got a Big Green Egg, but they haven't cared much to learn about it. They've only used it a couple of times because they're too intimidated. Hopefully I can learn and pass some tips on to them.

Tip: the ash shovel is designed to go into the door, allow the lip to catch inside the egg. This way, no ash falls in your patio. Did my first cook yesterday using the Flame Boss 500, what a difference!! It holds temperature exactly to set point. No more guessing, and allows you the freedom to do other things.

A small garden spade beats ash tool all day. Also can be used to clean out fine ashes from bottom (remove grate). Also is a great aid to organize charcoal in pit.

I am old school, if your familiar with a Weber charcoal grill the BG Egg is very similar to use but can do so much more. Once you have learned to bake pizza on one, try bread or brownies next!

You can get charcoal briquettes with no binders if you look online. In the UK I would use the brand Big K.

This video is very helpful. Last night was my 4th time to use my green egg. All 4 times I struggled with getting the temperature to the degree that I needed. I noticed last night that the felt ring around the inside of the egg was coming loose. Is that a problem or is it made to come off?

I was gifted the small Green Egg. It is older model and filthy inside. How do I clean it ? Layers of bbq's! Do I just pull the remains out when I use it. There is nothing on the bottom to drop it into. I didn't see any rocks 😂😂

Your torch is way overkill to light an egg. I use a paper towel or to with vegetable oil drizzled on it under a few pieces of charcoal

Yes, a small airspace between the egg will help with cooling. I sometimes even use a plastic table with a paver

my dad passed away last year, he gave me his egg on a really nice rolling cart he built for it... he mentioned when he was telling me how to use it that inside it you need to 'seal' the top and bottom with some sort of sand! i was never clear on that point and cannot find any videos on this! i was hoping this video would cover this point! can you please share any info you know about this tip with sand? i'm really wanting to use the thing, and i'm hesitant because i haven't done this yet

@@BackdraftBBQ i misspoke earlier. i don't have an egg, what he left me is a vintage japanese kamado. it's from the 40's or 50's... in my searching for answers to my question i managed to find more info on it (plus my mom corrected me about its age) it's an older style they don't make them the same way now. the firebox is a slightly different design, it has an upper ring that sits on the lower part you build the fire in. the two parts are apparently supposed to have a layer of sand or dirt between, i gather it's not for sealingor insulation, it's to 'cushion' the two parts to keep any vibrations from crackiing them when they're hot... i've heard conflicting stories about the necessity of doing this, but i saw nothing about what KIND of sand/dirt so i didn't do it... i cooked on it for the first time and everything went great. if i find out exactly what do do i WILL add the dirt, but not till i know what kind/how much.

Wife got me a large bge for Christmas and honestly it just seems like such a pain in the ass to use. It's sitting in my garage in the box... my WSM and Traeger are far easier it seems, so I don't know what to do. I'll probably end up selling it.

Once you get the hang of it you’ll change your mind. I use a mall bass torch to ignite and a blower to expedite the flame.

Great video, very concise and thorough. But you still haven't sold me on the BGE. I'm a Weber kettle kinda guy,and I think it can do everything your egg can do, and more with features that blow your egg away. Sorry! Was just curious to see what all the fuss was about.

Weber isn't even close. First they are extremely drafty . I can do brisket, or 12 lb turkey or shredded pork on one load of charcoal. Once you get the chimney and draft set, it will stay at 250 to 275 for hours .Never happen on a weber,steels too thin . Plus meat tastes really flavorful on the Egg. I can't explain it , maybe because the walls are so thick I've got 2 webers but I can tell you, even burgers are distinctly more moist and taste better on the Egg .

I respect your comment. I too had and have webber kettles. I think they serve a purpose, they are easy to transport, great for tailgating. But if you cook a lot, the egg has a few beni's. The egg can be snuffed out and you can relight the unused charcoal. They don't use much charcoal either. They can cook in the dead of winter (like -20f) and still maintain a temp, very easily. And low and slow...you can set it and let it go. No reloading. Anyways, still respect you, it is good to have both sides. Keep safe!

​@@BackdraftBBQ I enjoyed the video very much thanks, but it did convince me that my Weber Summit Charcoal (not a standard kettle) was the correct choice. As a large double-walled kettle, it does everything you mentioned the BGE does, without potential cracking, a lot less of the fiddley adjustments you discussed, and far lighter and more maneuverable. I’ve cooked on both and struggle to come up with a single advantage that could tip the scale the BGE’s way. That said, you did an excellent job covering the basics, and I think that anyone that uses the BGE or the WSC, has the necessary tools to cook some incredible food. PS - thanks for the Super Stick recommendation. I’m ordering one now.

I am learning to use my Large egg. Grilled some burgers last night that were great...at 375 for 8 minutes per side....when I took the meat off of the grate, I just lowered the lid and kept the vents the same. About 30 minutes later, I decided to grill a couple more but was surprised to see the temp had shot up to 500. How did that happen?

It is called Overshot (over overshooting). If you lit the whole basket of lump, it is like a train that takes a bit to get going, and takes a while to come back down. For 375 you should be around 1/2 on the bottom and 1/2 on the top.

The meat on the grill slowed the draft of air from bottom to top . If there was no food on the grill, it's like an opened chimney and air goes through fast, hence encouraging charcoal to get hotter .

Do you use drip collection foil pans under pork butts when doing low’n’slow or do you just let the drippings fly?

Butts come out great using a pan. I inject the shoulder with apple juice and leave it in the fridge overnight wrapped in a crackpot turkey bag .On the average I use 1/2gallon injected every 1-2"'s .Do the low n slo and have a temp Guage with a remote readout in the butt or shoulder. At around 170° I pull out the pan & meat and cover it with foil ,back in the Egg till temp of meat reaches 198 to 2o5° .At 198 ° the fat renders to liquid, pork can now be shredded after you let it rest 30 minutes . Enjoy ! The VOODOO KING 🤴

DD's comments are correct, but you can let the pork cook without the pan, just preference. I like to lay tin foil down on the plate setter if I am not using a pan, makes for easier clean up later!

@@BackdraftBBQ Thanks. I’m coming from a WSM, where there is no way to get above 375 or so. I wasn’t sure if the BGE’s hot burnoff capabilities meant that you can just open her up at the end of the cook and make it all disappear. Sounds like you still need to worry about drippings making a big mess, however.

Anything to mitigate the backdraft? Or just wear gloves? I noticed when letting the egg heat to 4-500 degrees then opening; it’s super dangerous

"Burp" the egg, just slowly open the lid about 1-2" and let the draft kick in.
