Great video. You have a very deliberate way of speaking that I find enjoyable. I also appreciate how well you take care of your smoker! I'm super guilty of letting my cookers get a little on the cruddy side. Joe with Smoking Joe's BBQ also keeps his cookers ridiculously clean and I've always wondered how much time it takes to keep them looking so immaculate. You've just answered that question. I’ve really enjoyed your videos. Saw the second, then saw your six month, one year and 3 year. I'm made a comment after watching your second video because I noticed you MAK pellet smoker in the yard. I mentioned that I also have a MAK and I am planning on getting the LSG 20x42. Your videos helped me make up my mind. Can’t wait to get the process started. My name is Lee and I live in Maryland near Annapolis. My one worry is having a supply of wood. This area is not exactly a hot bed of offset smoker use. The biggest grill store in my area doesn’t even carry an offset smoker. Hope I can get that worked out.

Hi Lee….. I’m glad that my videos have been helpful. Finding wood can be a challenge. Try searching for tree service companies. Many of them also sell wood splits of whatever is plentiful in your area, just make sure to buy a wood that’s good for smoking with food as opposed to pine & fir. Locally sourced wood is usually the most economical route. The alternative is to check your local hardware stores like Ace & Lowes as they usually have something that you can buy in a bag. It’s more expensive but it works in a pinch.

Congrats on your decision! It really is a great smoker. If you're new to stick burners, there will be a learning curve (the fire management).... stick with it & learn from each cook.

Good to hear you are happy with your purchase. I'm getting ready to pull the trigger on an lsg. I appreciate all the learned knowledge. My pellet smoker is nice but living in the south we have a number of smoking wood choices available. Northerners and westerners don't. I'm looking at the 20×36" unless you or anyone has advice otherwise.

I think the 20x36 is a fine choice. It just depends on how much cooking space that you think you will need. You get the same great quality.

Very nice video on care and use. I do the same and more with cleaning. Suggest to hose out the firebox each cook to get ALL the ash out an then let it dry. Then oil. (I don’t vacuum).On the drain: I removed the ball valve and put a union there with a 90deg. elbow. Then a16 to 18” pipe. On the end of the pipe the valve and another elbow to drain into a bucket. Tighten the union so you can swing it in and out. Union won’t leak. Used black pipe material. Much easier than reaching under the pit for the bucket. I’ve got a LSG 24x60” single door offset for my first pit over six years ago. Still looks like new. It lives under the roof of the cooking shed I built while waiting for the build of the pit. ( Gets wet occasionally on the Gulf Coast of Mississippi ). Don’t use a cover. They sweat under them. Like the idea of the food grade mineral oil. I’m trying it. Bet it’ll last longer than canola oil does. We made a very good choice of manufacturers. The best in my opinion. Checking out your other videos. Subscribed. Thanks 👍🏼

Whatever your doing, keep doing it! After seeing your one year video and your 3 year video, in my opinion it looks better in the 3 year video than it did in the one year video! That little preventive maintenance goes a long way in making your investment last. And I see you do have the ashpan in there. Nice!

thanks for the video , learned a few tips and tricks especially on the firebox , for the grill exterior I go very old school and use boiled linseed oil(about $7 at walmart) very little application needed so I just I pick up a used scotch brite wash sponge from the kitchen and use it for application, only thing one has to be careful with linseed is to use lint free fabric when doing the final clean before application as once seasoned it forms a very tight seal you can actually see the lint trapped under the seal, and the seal is probably water proof for about 6 months or more, plus it gives the grill a shiny water proof sheen, linseed is exothermic when its drying out so rinse sponge immediately after application even if planning to get rid of the sponge

I really like the video I have a 20 by 36 for about a year and half still learning it but it’s coming along also good looking dog in the background I was cleaning mine the same way but I wasn’t sure about so much cooking spray but I see a lot of people doing it so it must be right well thanks agine

Great video! That was a quick 3 years. When you buy great equipment, consistent preventative maintenance will keep it around for a lifetime. As always a very informative & well thought out vid for those looking to maintain their stick burner long term. How did the Cornish Hens turn out? I’ve never thought about smoking or grilling one of those. I hope your helper was able to pick up some tips while you were cleaning. She was very curious as to what you were doing 😅. Thanks Mark! The hens turned out well, my wife & daughter are light eaters so I think working hens into our rotation will work for us. Hey Grill Hey’s rub was preferred over Jeff’s Original rub (his rub came across as having too much pepper). My helper loves to mind my business while I’m outside. My job is to keep her from sticking her nose in the ashes or getting her fur covered in grease 😂 Take care!

Great information. I just picked up my LSG last month. Same model as yours, and I love it. I was using a pellet smoker, which was great, but the smoke flavor is so much better on an offset in my opinion. I'm working up the courage to smoke a brisket in the next few weekends. I know it will take a lot of time, but I'm sure the end product will be worth it. Thanks again.

There's no question that the smoke flavor from a stick burner is better than any pellet smoker. It's like being in the Super Bowl of smoking LOL. Briskets & beef short ribs are my favorite meats to smoke on the LSG. Brisket is the most challenging because it will take most of the day to cook but if you nail it, it will be fantastic. On a stick burner, remember to smoke briskets with the fat side up.

I was probably taking about which side of the brisket (the fat side or the meat side) should face up when you place it inside the cooking chamber. The fatty side of the brisket should be pointed towards the heat source or where it is hottest. In my LSG, heat rises to the top so I’d want the fat side of the meat to face up towards the heat. This helps the fat render. In most grills that aren’t stick burners, the hottest part of the grill is at the bottom so you’d want the fat side of the brisket to face the bottom.

No, I just wipe the exterior down occasionally with food grade white mineral oil.

I agree with your approach Michael. I think its better to see how your smoker fares in your local conditions before shelling out for the cover. You may find that its not necessary.

I have a 20x42 and use a motorcycle cover designed for a cruiser bike (one with a windshield). It fits quite well and was under a $100.

I appreciate the 3-year review man! Question for you: at the end of your video you mentioned it's "not necessarily the easiest to cook on, but you knew that going in". By that do you mean just cooking on a stick burner in general compared to a grill or pellet smoker? Or something specific to LSG's 20x42 compared to other offset smokers? Just curious because I've been smoking on a cheap Home Depot offset that I've modified and I'm ready to upgrade. I'm wanting to pull the trigger on an LSG soon. My heart wants the 24x60 pipe offset, my brain wants the 30" vertical, but my wallet wants the 20x42 offset lol.

Hi Logan, sorry for the late response. Somehow I didn’t see your comment until today…. anyway, I was talking about the challenges of cooking on offsets in general. As for LSG’s products, I think the 24” offsets maybe a little more difficult to master than their 20” offsets because they have tuning plates while the 20s don’t but the added benefit of the tuning plates is that you can fine tune how the offset cooks to your own liking. For example, if you want even cooking temps throughout, the smoker, you can accomplish that with the tuning plates. Initially I ordered the 24x40 offset but I changed my order when they announced the 20x42 due to the significant cost savings. Even temps throughout is the one feature that I wish the 20” could have but overall, it’s still my favorite out of all of my smokers.

Wow! Has it been 3 years already? I remember checking your early videos, your cooker still looks new! How many average size racks of St.Louis ribs will the bottom shelf hold? And does it cook from the top or the bottom? (Does one side of the meat brown faster than the other? ) I am still trying to get the funds together - I cook on a Old Country Brazos now, can’t decide which model…. A 20x40, a 24x40 or a 24 cabinet (side) thinking the 20x40 for most of my cooks but every once in a while I go big…. Ribs are our favorite we usually do 6 racks so more capacity than that would be good…. But not essential. Keep up the good cookin!!

Hey Louis... I haven't tied loading my 20x42 to the brim with ribs but I think 6 St. Louis slabs would fit easily on the bottom, laid side by side. Probably 8 if you pushed the envelope. You could do a lot more with vertical rib racks or you could also cook with the top grate. Someday, I hope to have a reason to load it up with as many slabs as possible! The left side (opposite from the firebox) cooks hotter than the right. LSG calls it a cross-flow cooker, the smoke get progressively warmer starting from bottom right to the bottom left. It's warmest at the upper left side. The challenge with filling the 20" models up with meat is that your meat will cook at different rates. I filled mine up once with chicken quarters and the ones on the bottom took quite awhile longer to cook than the top. It's not a huge burden, but it is worth considering. If you plan to cook the same meat in really large quantities, then it might be worthwhile to consider LSG's original pipe smokers because they have tuning plates that will allow for more even cooking throughout the chamber. Have the LSG 24” offset cabinet smoker. Loving it. Been almost a year and it’s produced some really good BBQ. But the 20” series is what peaked my interest in LSG’s but I ended up getting the cabinet as it provides much more cooking surface area for the footprint. LSG makes great pits. Mine tends to like 260-275°F do the 20” pits like a cooler temp?

The LSG 20x42" cooks around 10 - 20 degrees hotter on the top grate than the lower grate. I'm usually around 240 on the bottom and around 250/260 on the top.

I only use PAM on the inside of the cooking chamber & the inside of the firebox. I use food grade mineral oil for the exterior.

Enjoyed the video. Looking at same unit. Is door heavy without a counterweight? Also.. would love to add a bbq guru temp control unit to this smoker for overnight cooks with their s charcoal basket. Curious if you have any experience with that for longer/ unattended cooks

The chamber door is not light but I’ve never felt that it’s heavy enough where I wished that it had a counterweight. I bought LSG’s charcoal basket but I have never used it so I can’t speak on how well it works.

Really good video. I just have one question. It appears that you opted to get the ash pan that sits under the fire grate, but you cleaned it by hand rather than just taking it out and dumping in the trash can. I have an LSG Adjustable Grill and Smoker and that ash pan is a godsend during cleanup. In more than a year and a half of almost daily use, I've never once had to use a shop vac to clean up the fire pit.

Hi Mike…. you’re right, I treat the ash catcher likes it’s part of the firebox giving it extra metal on the bottom. It’s fairly heavy so I just leave it in place. At this point, I think it would take considerable elbow grease for me to lift up & out of the firebox as it has practically molded itself in place. It’s been like that for so long that I don’t even think about it anymore.

Just a suggestion. Get a bigger trash can whose mouth is wider than your ash pan, line it with a black plastic bag, and you can just pick up the ash pan an dump it in. Whatever doesn't fall out, you can then use the scraper on. I've been doing this for years with my LSG Adjustable, and it literally just takes less than 5 minutes to clean out the firebox. I took your suggestion about using mineral oil, but I just haven't got around to applying it yet.

Thanks Mike…. funny, I already switched to a larger trash can since the time from when this video was made. I also have a thick reusable aluminum sheet that sits on top of the ash pan that someone else recommended. I can’t remember the name of the product off-hand, but I just lift the sheet after cooks and dump the ashes into the trash. It’s much lighter than lifting the ash pan.

Is it by choice that the charcoal box is tiny comparing to the fire box I would assume that you have to add more wood more often because it's smaller? Did you find that it's easier to keep the temperature you want with the smaller basket?

The charcoal basket is designed to help keep the fire small & contained. In other words, you want the wood & charcoal to be compact & close together to help them burn more efficiently. Wood splits are going to burn at their natural pace regardless of where they are positioned. Plan on adding a new average sized split to the fire around every 45 minutes (time varies depending on the size of the split & other conditions). LSG’s basket helped me to improve my ability to maintain a good fire tremendously. I highly recommend it.

Hey Kenyatta, When I bought my Lang 48 stick burner I got the one with a trailer for several reasons. One was if I ever decided to get another and move up in space a stick burner on a trailer had a marketable attraction and possibly a better resale. Two was obvious taking it with you to a friends or family house, or tailgating. Third was the idea of entering competitions so what else better than just hooking it up to the SUV. The trailer came with 13 inch rims, and being 6' 3'' I didn't like the idea of bending, I prefer things higher for comfort so 15 inch rims were placed on. Then lastly, I liked the concept of the reverse flow and after 4 years I still do. I have a question, the fire box I have is 18x18 and the LSG basket you have purchased is made for your 42" LSG, do you think this basket would have the capacity to heat the extra volume volume of my chamber, it's 48" long and 24" in dia. I did call Ben Lang in Georgia and it so happens they're working on a similar basket now specific to the size boxes that go with each cooker. Wouldn't you know it, someone always has to throw a wrench into the works just when. Great video by the way

Hey Tyrus, an offset with a trailer would be a dream come true. Someday….. Check out LSG’s website, I believe they have different size baskets. I’m guessing that the basket for their larger pipe barrel offsets would be a better fit than the version that I have for the smaller 20” offsets.

Yes, unfortunately it is warped but it still fits in between the rails & gets the job done. I guess I could order a replacement but so far, I haven’t found it to be necessary.

Right now, my go to place is Hurst Firewood in American Canyon. I've also used Waraner Tree Service in Clayton. A few people have suggested Lazzari in Brisbane but I don't think they are open on weekends so I've been unable to go over there to check them out.

I found a relatively local tree service business that sells different types of splits - most of the time they have oak. Sometimes they have apple, cherry or peach. They are the economical but in a pinch I order hickory, pecan or cherry splits from Ace Hardware for delivery. I think it’s best to find a local tree service and go with whatever is plentiful in your area.

Stick burners offer more risk & reward than charcoal based grills. If you nail it, the food can be incredible. On the other hand, if you don’t have a “clean” smoke, the food can taste very bitter. There is more of a learning curve & maintaining the fire in the stick burner requires a lot more time & attention. Cooking on a stick burner is a completely different experience. Your decision shouldn’t be driven primarily by the flavor profile because you can make great BBQ on either. If you’re looking for a different and more challenging cooking experience and if you’re willing to put the time in, then the LSG is a great choice.

I’m on the fence about getting a Lone Star Grillz 20 by 36 or a Lang 36 reverse flow. Both seem great! I like the Lone Star though! What size wheels did you get? I have a gravel driveway where the offset would go and was wondering how hard it is to move? Thanks!

I upgraded to the 8” wheels. I had to wheel my 20x42 across my grass lawn. I laid some of the plywood from the crate that it was shipped in on the grass which made it easy to move by myself. I think most people go with the 8” wheels to make transport easier.

Thank you for watching & commenting. I’m glad that my videos have been helpful. I might be wrong, but I think LSG only sells one version of the charcoal grate. I added the optional ash pan which sits under the grate. My firebox is 1/4” thick which is the standard version. You can upgrade the firebox to 1/2” thick. Overall, my firebox has held up well and I would order it again. If you live in an area where temps drop below freezing (and you plan to cook in those conditions), then you may want to consider upgrading your firebox to 1/2”. I believe the advantage of having a thicker firebox is that it will hold the temp better in cold weather. The flip side is that it will require more fuel to warm it up. I also think that you lose the flattop griddle at the top of the firebox if you go with the 1/2” version. I like to use my griddle for breakfast or something on all day cooks. Let me know if you still have questions about the fire charcoal grate.

Got it….. my grate is actually a little warped. I don’t know if that’s common or if it’s because of my lack of experience at the beginning. I think that if I had the charcoal basket from the beginning, then I probably wouldn’t have warped the grate. That being said, I’d most likely go with the 1/2” to be on the safe side.

Use an empty spray bottle and a measuring cup. Pour some canola oil into the measuring cup (i.e. 2 cups) and then pour it into the spray bottle. Then add 1 cup of water. Shake the spray bottle to mix it well. However, like I mentioned in the video.... I don't think this combo works as well as white mineral oil.

I have the 20 x 36 lsg and have problems with surface rust after I use water in it.Do you have the same problem?

No, I haven’t experienced problems with rust. I try to drain the water the day after I cook, dry it out & spray with cooking oil. You may want to reach out to LSG for their thoughts on how to solve & prevent it from happening.

I did and they told me to wipe it clean spray it with canola oil let it sit for 30 minutes wipe it down and then spray it again and it should be good for the next cook. I do the same thing I drain it the next day, maybe I didn't clean it out right. 🤷‍♂️🤷‍♂️

Thanks for sharing your great review after three years. It almost looks like your firebox grate is warping, is that happening? I saw on a video by Rus Jones and he used AshKickers below the grate to clean up the firebox, have you tried them? Do you oil your hinges? Thanks again.

The firebox grate is warped some in the middle but it still fits inside of the slats for the grates so I haven’t worried about it. I also oil the hinges from time to time….. forgot to mention that in the video. I’ve never heard of AshKickers….. I’ll look into them, thanks!.

Hi Paul, ultimately, the quality comes from the person doing the cooking, not the grill. The key is to cook, cook & cook some more. You have to learn how your smoker functions..... are there any hot spots, how large of a fire do you need, what size wood splits work best, does the smoker have any deficiencies that you can overcome like leaks, etc. The biggest difference between offsets made with thick steel versus offsets with thinner steel is their ability to hold steady temperatures. COS (cheap offsets) will have more temperature fluctuations throughout the cook which will require more tinkering from the cook but all of them can produce great food with practice (even the best made offset will require practice). I don't have personal experience with Oklahoma Joe but I know that they are very popular and people are making great food with them. Their reputation is pretty solid as a mid-tier, more affordable brand and I've never heard about any serious issues or complaints so I think you will be fine. Check out a few BBQ forums (BBQ Brethren, Amazing Ribs) to see what people who own them think. Good luck on your BBQ journey & thanks for watching & subscribing!

Over time..you could not get away without a cover in humidity of Texas.. this would deteriorate steel over time.. i use the cover religiously because of our climate … i think California weather might allow a no cover but not humid south..

I buy large foil pans and disposable wire racks. I can toss the whole business away when I am done. Zero cleaning of the cooking chamber required.
