The original recipe for this is from Avalon cakes. I just tweaked it slightly with the help of my friend of Sugarfreakshowdsm on Instagram. Enjoy my loves.
Ingredients: 9 sticks of unsalted butter
1 stick salted butter
2 pound bag powdered sugar
3/4 cup or 1 cup pasteurized egg whites
Teaspoon vanilla extract

That's just like my mom. If anything doesn't look right, just turn up the mixer speed.

You're a wonderful soul, Mimo! My mother passed away as did my grandmother. They taught me the basics of baking and cooking but when it came to things like different frostings and such, I was left clueless. My mother died when I was 17 and my grandmother passed when I was an adult but she had dementia and asking her how to do things became difficult. I now rely heavily on what they taught me fundamentally but others' teaching me what they know. I'm proud that you're among my teachers. May you be blessed always.

Lol you crack me up. But on a serious note, using a drop of violet to turn the yellowish buttercream white is sheer unadulterated genius. I never would have thought of that in a million years even though I use violet colored conditioner to cancel out the overly yellow tones in my hair 😳

I'm wondering if a tad bit of violet fabric dye added into a measured detergent cup could turn yellow-toned whites back into full-whites again!? 🤔😏😯

@@christysaldate well yeah in Pakistan when the white clothes get a bit yellow onto them we add a voilet dye we call it Neel and add it in enough water to soak the cloth add a bit of colour and soak it for some time after washing it properly have a great white 🤍 suit back

This is great. It's smooth and has no grit. I like how it takes flavoring as well; you can use whatever flavor combos you like. This will be my new go-to.

I mixed the egg whites and powdered sugar for a minute (they came together pretty quickly) and mixed 3 minutes after putting in the butter. Then I made sure to scrape the sides and bottom, then put in my food coloring and mixed for another 2 min. It came out soft, minimal air bubble and smooth!

I mixed mine for 5 minutes to make sure all the air bubbles are out. It has been wonderful.

I would love to see a video exposing how you started it all. Like did you start posting to fb? This is been my dream for almost 20 years now. I work at my local grocery store where we make fresh donuts and eclairs. I just want to build my own thing but am lost on where to start 😕 I keep debating that or going to a more professional bakery. Not that they would make all the awesome things you can do. They just do a lot more and I want to keep learning.

I use same no heat technique with a slightlh different variation in ingredients ratio. It is my go to buttercream. I never went back to any other recepies.

Imitation vanilla is made with beaver butt glands. You should make your own. Vodka (I believe at least 80% alcohol) and vanilla beans is all it is, and you can buy the beans in bulk to save money. Very worth it, and you can keep replenishing it.

How much coco powder would you add to one batch to make into chocolate frosting? And is this your favorite for piping?

I’d recommend melted dark chocolate for a better flavor but maybe mix some milk into about 1/2 cup of cocoa until it’s a paste (not a liquid) and then add most of it and see if it’s desirable enough :) or add in room temp melted chocolate

I have used italian buttercream for my cakes but im looking into this recipe looks great. can you tell me how good this one holds up with high temperatures? How long can i have a cake out under shade when is 🥵 hot?

Stefany Mendoza Hello, unfortunately it doesn’t hold well in hot temperature. This is why I always refrigerate it. But it works great under fondant

If I may ask, why unsalted butter? I always add extra salt into my buttercream, because I feel it makes the buttercream taste better.

She uses a stick of salted too. Honestly id just do all salted since its not too salty anyway and compared with the amount of sugar its totally fine.

Do you use the same recipe for piping decorations or do you use a firmer one? I need to make a cake that will be frozen and then thawed so I’m scared the decorations won’t stand 🙈

This is perfect for making decorations, for icing a cake before fondant and basically all! But if you want your decorations to crust a bit, use American. I honestly think using this is still better and more convenient.

Does this hold up in room temp? I want to use this frosting for cupcakes to take to school with me on Valentine’s Day. I will have to spend the whole day giving them out sense all my friends are spread out among each of my classes. Will it hold up or melt? Should I take a chance?

Mimo I was gonna try this recipe but downsize it to 1/3 of the recipe. Only issue for me is that I only have all salted butter except one stick of unsalted. (My daughter made my last store run or I would never buy salted 🤦🤷) Should I try it or wait ?

Gigi Ahmed you’d have to double broil The egg whites with sugar and that would be a completely different way to make it. I would recommend following the Martha Stewart recipe for that

You have to let it thaw overnight and if it’s still firm, I usually put it in the microwave for a little bit and then you have to re-whip it.

First a foot note. Don’t add too much violet or else it’ll turn your buttercream/any other cream a.. idk.. dark-ish grey colour (or just violet, depends). The dark-ish grey colour looks unappetising so just don’t add too much 😂
