After going to pastry school in 2010 and making macarons for the first time, I became obsessed with recreating these delicious cookies at home! However, I became stumped after having batch after batch turn out subpar.

The recipe featured in THIS video is an adapted version of Indulge with Mimi. I love how her recipe mimics that of an Italian method by creating a very thick and shiny meringue and has equal parts confectioners sugar and almond flour so it’s a tad less sweet than Stella’s recipe. Below is my adapted version of Indulge with Mimi’s recipe.

French Macaron Recipe
Adapted from Indulge with Mimi
Yields 2 dozen paired macarons
***(in this video I was making a larger batch due to an order. Please use measurements below)
100g egg whites fresh (or carton egg whites with whipping agent), room temp
90g sugar
3g egg white powder
130g almond flour (if you store in the fridge, let come to room temp)
130g confectioners sugar
My baking method:
Preheat oven at 300F
Drop to 275 after putting macarons in oven
Bake 11 min
flip tray and bake 10 more min
