常见问题 一、蛋糕烤不熟 原因分析:因为蛋糕底部的加热温度基本上是恒定的100度,蛋糕上色要靠上火的加热,因此上火的温度不宜过低,并且烘烤时长不能太短 解决方法:用烤箱温度计测试出上火的实际温度,然后进行适当的调节,并根据模具大小调整烘烤时长 二、蛋糕出炉后塌陷 原因分析:烘烤时间不足,蛋糕内部还没熟 解决方法:延长烘烤时间,蛋糕成熟后高度会回落,还可以用牙签插入检测面糊成熟度 三、蛋糕底下有布丁层 原因分析:1.制作好的面糊静置太久,气泡上浮导致面糊分层;2.烤箱没有充分预热,相当于面糊静置太久的后果;3.活底模具没包紧,烘烤时水跑进模具了 解决方法:1.操作一气呵成,不要停顿太久;2.先将水加入烤盘,然后放入烤箱充分预热;3.如果没有固底模具,最好采用模具放在烤架上蒸烤的做法 四、蛋糕组织粗糙 原因分析:1.蛋白打发过度;2.蛋白与蛋黄面糊搅拌不够充分 解决方法:1.蛋白打发至湿性发泡即可,避免打发过度,另外不要过度减糖;2.要将打发蛋白与蛋黄面糊充分混合均匀 1. 蛋黃糊的操作避免一直繞圈攪拌讓麵糊起筋。 2. 蛋白霜加入白醋(用檸檬汁代替也可以),可以增加它的穩定度,建議新手不要省略這個步驟。 3. 蛋白霜切勿打過發,否則即使是水浴法蛋糕一樣會裂開!只要打到不會移動,攪拌棒拉起時呈現大彎勾的狀態就好囉~ 4. 溫度非常重要!如果烤箱保溫效果不好的,最好是拉高10~20度預熱烤箱,否則蛋糕進入烤箱後溫度會下降太多,造成表面結皮效果不好,蛋糕可能會有不好看的紋路。 5. 過程中請觀察蛋糕的狀態,大約20分鐘後蛋糕才會開始慢慢爬升,太快爬升代表下火的溫度太高,需要改變置放的位置(例如下層移到中層)或下面多墊一個烤盤吸收熱度。 6. 蛋糕出爐表面會變皺,代表表皮沒有烤乾或是上火溫度不足,一樣可以調整擺放位置來改善。 7. 出爐後蛋糕的四周縮腰高度降低,除了蛋黃糊操作上出筋,也可能是上火太高,使蛋糕表皮結皮太快,使得蛋糕內水氣出不來,所以出爐後會立刻往下縮,表皮也可能因為水氣而變皺。
