Banana Muffins | Small Batch | Makes 4 muffins

All you need is one ripe banana to make these tender and delicious banana muffins. They have an amazing streusel topping and they are perfect for breakfast or a snack.
Ingredients:
4 Tbsp canola or vegetable oil
2 Tbsp sour cream or plain Greek yogurt
1/2 tsp vanilla
1 mashed banana
1 egg
1 cup plus 2 Tbsp all purpose flour
1 tsp baking powder
1/4 tsp salt
1/2 cup sugar
Optional: add in 1/2 cup of chopped nuts , chocolate chips or cinnamon chips if desired.
Streusel topping:
1/4 cup brown sugar
1/2 Tbsp all purpose flour
1/8 tsp cinnamon
1/2 Tbsp butter, softened.
Directions:
In a bowl combine oil, sour cream, vanilla, egg and smashed banana. Stir to combine
Add in dry ingredients including flour, baking powder, salt and sugar. Mix to combine
For the streusel topping, in a bowl, combine, brown sugar, flour, cinnamon and softened butter. Use fingers or a fork to combine until it resembles wet sand.
Line muffin tin with cupcake liners.
Add batter, Fill to the top of the liner.
Sprinkle with streusel topping.
Preheat oven to 425 degrees F. Bake for 5 minutes and then turn oven down to 350 degrees F. Leave muffins in oven. Bake for another 20-25 minutes or until a tooth pick comes out clean.

This is very close to the banana bread recipe that I use…. I always add almond extract along with vanilla extract (equal amounts of each). Really adds to the flavor! Also - I noticed that your egg is missing from the printed recipe in the show notes too… Thanks for another tasty small batch!

Increased oil to 5T and added 1T of honey (to retain moisture) and substituted heavy cream (all I had) for the sour cream-OH MY GOD. Thank you for this recipe. New go to.

I absolutely LOVE your recipes. I was wondering if you’ve ever thought about pineapple cake with cream cheese frosting? It’s SOOOOO Good (as you say). Anyway, that’s just a loving nudge to think about it!
