Strawberry Muffins topped with a crunch streusel topping - the perfect combination of a muffin and a piece of coffee cake.
Ingredients:
1/4 cup butter, melted
1/2 cup sugar
1 egg
1/4 tsp vanilla extract
1/4 tsp almond extract
1/4 cup milk
2 Tbsp sour cream of plain Greek yogurt.
1 cup all purpose flour
1/4 tsp salt
1 tsp baking powder
1/2 cup fresh strawberries, diced
Streusel Topping:
1 Tbsp butter, slated
2 Tbsp brown sugar
1 Tbsp flour
Directions:
Melt butter in microwave or in a saucepan on the stoe top.
Add in sugar and stir to combine.
Add in egg and extracts.
Pour in milk and mix in sour cream or yogurt.
Add in dry ingredients - flour, salt and baking powder. Stir until just combined.
Fold in diced strawberries to incorporate.
Line muffin tin with cupcake liners.
Fill muffin cups to the top with batter.
Make streusel Topping:
In a small bowl combine butter, sugar and flour. Use fingers to incorporate. Should resemble damp sand.
Sprinkle on top of muffin batter
Bake at 350 degrees F for 20-25minutes or until set and baked through.
