My DIY barrel pizza oven put in a good shift last year but was left all alone through winter with nothing but a plastic bag on the chimney. How did it do? Is it a collapsing rust bucket in spring? Did it spring a leak? What level of maintenance does it need and does it work as well as ever?
May DIY Pizza ovens use perlite or vermiculite cement and age doesn't treat these types of ovens well. Two years life isn't unusual so I wondered how mine had fared after a cold and super wet winter pretty much unprotected.
You will see that cosmetically it has done brilliantly. I Used outdoor waterproof grout, the kind of stuff used in swimming pools, for the tiling and it has done brilliantly. No mould, moss, algae, anything so I'd say that the outside is a real success.
The inside is a little rusty, particularly where I tend to have the hot flame, but is ok and no where near as bad as I feared it would be, so I'm pretty happy. The floor has sunk a bit which will be due to bemusing rock wool and sand, but its not a big deal and doesn't affect use one jot. So a lesson there but not a catastrophic one.
So we heated her up, made some pizzas and then I tried to do a focaccia version 2 as my first attempt was a bit crispy. And voila, a successful Home made pizza oven baked Focaccia. Yum Yum in our tums.

Commenting on another post regarding the tiles, I'd highly recommend stoning the tiles edges. I'd also suggest getting a hand broom or shop vac after using your wire brush; last thing you want is metal slivers from your wire brush getting into any foods. You did a great job on your oven and your bread looks delicious. Blessings prayers and praises to The Most High

Hi and thanks for commenting. Yes the red tiles had sharp edges which we were careful of when putting them on but we wore gloves and I made sure any edges were well grouted in. The wire brush is actually a BBQ brush and stainless so should be good I think. I also always clean the oven floor just before cooking with a wet/damp cloth wrapped around the brush to get rid of any ash etc, so I hope that is good enough. No problems so far. Thanks again. Andy

Don't let the PIZZA OVEN BUG BIT YA! There many thing setting on Your Patio. That will make a great pizza oven. Any dome grill, or a smoker.. NICE BUILD! but i save time and money by using my WEBER KETTLE ! by using pizza pans and a short strong peel. All the clean up is. washing the pizza pans, and dumping the ashes

And I have cooked pizza inside an upside down frying pan on the BBQ too ! I have a big gas BBQ but people really love the 'theatre' of the wood and real fire, plus its just another way of having fun cooking. Cheers. Andy

TBH I dont use dairy in my dough - just olive oil and water. I do use it when doing KFC style chicken or marinating a rotisserie chicken too.

u need apply peanut oil or canola oil if you use direct contact for a metal in oven. if you not it will root very quick once it already form a rust.

and kind a danger when you cook a food inside a rust oven. some case it will fall into your pan and you eat it.

great vid!!!... hey any reason y you didn't use perlite on the inside of the can for double insulation???( even tho-you did a good job insulated the outside), figure it was easy enough to do, when you cut the barrel in half at construction of it

Hi. Firstly thanks for watching and commenting. Fact is I'm too tight to go out and buy a bag of perlite and I was also worried about its longevity. That said, next time I would add some under the floor for better insulation. Inside the barrel...I did think about it but figured it'd be a bit fiddly and turning it over would be dodgy, but a valid thought. Thanks again

Do you think we can build this on top of a metal framed table with wheels on? So we could move it to the garage during winter? About the rust cleaning it after final use and coating inside with some olive oil or cooking oil will prevent it from getting rusty during winter?

Hi. It is really heavy, circa 300kg. Everything is possible though. The rust - I'm not really concerned. Yes it will degrade but in actual fact its just a glorified former for the concrete. Its done a few winters now and still in one piece so I'm mor etan happy with the 'mear' I'm getting. Thanks for watching.

I'll bet the floor wouldn't have sagged if you had used sand instead of insulation...just sayin'. ;) That bread was nothing short of amazing. The crunch when you bit into and the smoke flavor that I know is there has my mouth watering. What kind of wood are you using?

Yeah...I did use sand but on top of rock wool. Vemiculite or perlite floor next me thinks...but the oven is still fine and actually I could probably pull up the floor and add better insulation retrospectively as its only 'mortared' in around the edge. Maybe a thought if it gets too droopy. Thanks. Andy

Thanks. Yip its food you can't buy and little by little my skills are growing. Wood - my other videos are a loft conversion and I have a stack of 120 year old roof timbers which I'm using. Dry as a bone and no treatments. I also have some lime ageing right now and also have some oak which I prefer as its hotter/last longer. I have also used apple. I tend to find that the subtle difference in the smoke are pretty much indistinguishable, so preference is more down to oven maintenance and how hot I want it....I'm not smoking the food so it only gets 'minutes' not 'hours' which is where I think the wood choice is less significant. And yes the smoke flavour was there....and it really gets in to the tomato sauce and mushrooms, which are my favourites. Thanks again. Andy

Hi Daniel. Thanks for watching. Obviously it depends upon the size of the bread/pizza. I can get 3 x 10@ pizzas in but stick to two as I have the fire at the side. However if you had the fire at the back 4 would be easy. The roasting tin you see me use is 30cm x 45cm and, again with any fire at the back could probably get two of those in at a push. Yip it sure is. Only thing I'd change is better (solid) insulation under the floor (like pearlite). Other than that its a real joy.

My guests loved the bread. Proof of the pudding is in the tasting....
Why didn't I know this method before! Anyone who has a pan at home can do it.
