ONION TOMATO GRAVY - Once you get the basic gravy right, you can make any dish easily. Let's break down the basics of a basic Onion Tomato gravy and give a quick twist to a simple Dal as well.

ONION TOMATO GRAVY
Preparation time : 15 minutes
Cooking time : 25-30 minutes
Servings : 6-8
Ingredients
For Onion Tomato Gravy
¾-1 cup Oil (तेल)
1 tsp Cumin Seeds (जीरा)
4-5 medium Onions - chopped (प्याज़)
2 tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)
1 tsp Turmeric Powder (हल्दी पाउडर)
3 tsp Coriander Powder (धनिया पाउडर)
1 tbsp Ginger-Garlic Paste (अदरक लहसुन का पेस्ट)
3-4 medium Pureed Tomatoes (प्यूरीड टाॅमेटो)
Salt to taste (नमक स्वादानुसार)
1 medium Tomato - chopped (टमाटर)
½ tsp Vinegar (सिरका)
For Dal
½ cup Cooked Dal (पकी हुई दाल)
Water (पानी)
1 heaped tbsp Onion Tomato Gravy (प्याज़ टमाटर की ग्रेवी)
1 tbsp Coriander Leaves - chopped (धनिया पत्ता)
Process
For Onion Tomato Gravy
In a kadai heat oil and add cumin seeds, chopped onions saute them until golden brown and cook completely.
Now add degi red chilli powder, turmeric powder, coriander powder, ginger-garlic paste and keep on sauteing until fragrant.
Then add the tomato puree, chopped tomato, salt and cook on medium heat until properly cooked.
Finish by adding vinegar then cook it for a minute and switch off the flames.
Cool it down and store in an airtight container in the fridge.
For Dal
In a hot kadai add cooked dal, water, onion tomato gravy and mix it properly then boil it for 2 minutes.
Now add coriander leaves, stir it once and continue boiling for a minute.
Switch off the flames and dal is ready to serve.

My Mom used to make this masala, every Sunday and keep in fridge for the week. I myself have been doing it for at least 15-20 years. Ranveer is right. It is magic 😀

Basic base red curry paste of any meat or non veg dishes, I give this recipe to my English friends for years, ask them to modify by adding yogurt, cream, other spices etc. Brilliant for fast pace life person's. I personally love making it fresh though, as hubby hates freezer food!!

Hi Ranveer….I make this masala with a little variation I chop the onions in food processor and then make purée of tomato the same way little chunky adding garlic and ginger after a while and instead of adding powder Haldi I add fresh Paste of haldi and fresh paste of green chillies I ask add some tejpaata and take it out before storing ….I keep the masala In I freezer…which lasts for almost 20 days

Great minds think alike. Ranveer since the time my kids have come home because of the pandemic,I make this masala everyday because evenings is their turn to chill and this basic masala is ready for their meals, veg/noon veg. It comes in very handy. Save like you said I also add a bit of tomato pury to give it that richness ❤️❤️❤️❤️

'Chunkypan' reminds me of Mexican tomato salsa that is readily available in markets and in the ingredients list (mentioned in the container) it's mentioned chunky tomatoes

Thanks for the recipe chef. I make this every week but always wondered how I can increase the shelf life, I never thought of using vinegar because of the pungency. Thanks for the useful tip. Can you also show such preservable gravy of different bases, like spinach, khobra, cashew, kala masala? Maybe a shorts series with all those recipes? Hope to see them in future.

Yeah keeping eatables in Fridge for long time is a bad idea. Acc. to Ayurveda, food should be always prepared hot, served hot and ate hot.

As far as Ayurveda goes, when the books on Ayurveda were written there were no refrigerators. In absence of freezing, yes you should eat fresh, but if you can freeze food, there is nothing wrong with that as well.

@@ShwetaGupta-hd6yk But definitely you loose on nutrition. Yes, during ayurveda there where no refrigerators. But, There was no need as such during that time to preserve food for months. However, If they wanted to preserve food for months together, they used natural preservative. So, I think there is no such need to prepare this masala. It simply degrades the nutrition and Makes you lazy as well..

Chef you made me to recollect my days in England. I Used to do the same but used tinned tomato.I used to take chicken from KFC then this curry kind of curry with rice.I used to make for whole week.becoz used to work for restaurants and study as well.Thanks for this video.Anyways though hard days I MISS ENGLAND.

One tip: freeze this in ice-trays rather than jars. The masala-cubes make it easier for future use, and proportion will be predictable every single time.

Ranveer please explain- FREEZER mein kese rakhe- i mean when you want to use everyday? Or even alternate day? Should we Defrost the entire bottle? I kept in freezer tray so ice cubes jese nikaal lo. PLEASE SUGGEST. TODAY I MADE EXACT SAME MASALA and aapka video abhi dekha. I added Kasthuri Methi bit. I made mushroom masala- i added curd.

Chef it took a lot to accept it and with a lot of courage i want to say that i have severe depression and anxiety issues.. I had boiled pinto beans and mixed vegetables in the pressure cooker, and was eating it with salt and sriracha sauce because I did not have time to make the gravy. Thank you Ranveer for this shortcut. Now I will make this gravy and enjoy.
