CHOCOLATE MOUSSE & BASICS OF CHOCOLATE - Right since my days in hotel school and later on hotels, Chocolate has been one of my favourite ingredients to work with. Pretty much at par with eggs. Here's my recipe for 2 versions of Chocolate Mousse, both eggless and one Vegan. Do try and let me know how you like it.

𝗘𝗚𝗚𝗟𝗘𝗦𝗦 𝗖𝗛𝗢𝗖𝗢𝗟𝗔𝗧𝗘 𝗠𝗢𝗨𝗦𝗦𝗘 (2 ways)
Preparation time: 15-20 minutes + Cooling 10-15 minutes
Serving: 2
Ingredients
Chocolate Mousse With Water
400 gms Couverture dark chocolate, cut into cubes, कुवेचर डार्क चॉकलेट
150 gms Hot water, गर्म पानी
200 ml Coconut milk, नारियल का दूध
Chocolate Mousse With Whipping Cream
400 gms Compound Dark chocolate, cut into cubes, कंपाउंड डार्क चॉकलेट
1 cup Melted chocolate, पिघली हुई चॉकलेट
2 cups Whipping cream (unwhipped), विपिग क्रीम
For Garnish
Chocolate syrup, चॉकलेट सिरप
Orange segments, संतरा
Mint leaves, पुदीना पता
Process
𝗖𝗵𝗼𝗰𝗼𝗹𝗮𝘁𝗲 𝗠𝗼𝘂𝘀𝘀𝗲 𝗪𝗶𝘁𝗵 𝗪𝗮𝘁𝗲𝗿
In a bowl, add chopped chocolate. Keep it aside.
In a sauce pot, add water, coconut milk once it's boiled.
Transfer it into the chocolate bowl and mix it well.
Place the bowl on top of another slightly smaller bowl, filled with ice and cold water.
Whisk vigorously until the mousse begins to thicken.
With the help of a blender to smooth texture.
To serve the mousse, you can make a quenelle out of it and serve it or pour it into a serving glass and set it to chilli for 10 minutes.
Garnish with orange slices and served chilled.
𝗖𝗵𝗼𝗰𝗼𝗹𝗮𝘁𝗲 𝗠𝗼𝘂𝘀𝘀𝗲 𝗪𝗶𝘁𝗵 𝗪𝗵𝗶𝗽𝗽𝗶𝗻𝗴 𝗖𝗿𝗲𝗮𝗺
Preheat water in the double boiler over medium heat
Add the compound chocolate in a bowl and place on the boiling water to melt the chocolate.
Meanwhile whisk the whipping cream until soft picks.
Mix the whipped cream into the melted chocolate and whisk it well until smooth texture.
Insert a star nozzle into a piping bag and keep it ready.
With the help of a spatula fill the piping bag with the prepared chocolate mousse.
To serve the mousse, take a serving glass and apply some chocolate syrup on its inner surface and fill it with the chocolate mousse, some orange segments and mint leaves.
Keep in the refrigerator for 10-15 minutes.
Remove and garnish with orange segments, mint leaves and serve chill

I'm an MBBS student.... Due to lockdown i haven't been able to dine once outside..... And kinda ruined my mental health coz i live alone but idk how one day Ranveer's video just popped up on my KZfaq recommendations about dal makhani.... I tried making it and it came out not very good but tasty..... But i got interested in cooking little by little i improved alot, yesterday when i came home i made that same dal makhni for my family and it came out insane..... I tried this recipe as per the exact steps. It came out perfect. Ranveer has done a good take on Heston Bleumenthal recipe. I have seen many recipes and tried them but this one was out of the box. Adding coconut milk also enhances the flavour. I have used Amul Dark Chocolate 55percent without adding any sugar. And it doesnt need any more sweetness. Ranveer has well thought us that the ambient temperature needs to be perfect to tame the chocolate. Thankyou for sharing your genuine knowledge with us. We would love to see more Patisserie from you.

You are awesome❤️ You don't only teach how to cook but you connect people to food in different ways.M following you for a few months now.And now I don't see cooking only as a process of adding specific things at specific times in a receipe to get the dish but i also see and try to figure out what difference each ingredient(like a drop of kewda water and a pinch of nutmeg) can make and it's interesting actually. With the chocolate compound in home for a long time, today I finally decided to add some nuts to it and set it again for my kid. How I wish I saw this video before doing it. I have prepared so many emulsions in our pharma college lab, read emulsifiers in ingredients list of chocolate bars but still couldn't figure out chocolate is an emulsion. Me and my kid were thrilled to see the cocoa fruit. ❤️

Yes, the temperature of the sugar is tend to be very high. So you have to be little careful while handling that. You should buy that cloth gloves for handling hot sugar items

Paskshala k guru ji ne bataya hai, isliye yeh jarur banaya jayega. Best part of any recipe of yours is the information, knowledge you provide. Ek apni journey hai har khane ki yahan tak aane mein. Aur aap bakhubi jantey hain aur hume bhi batate hain. Bahut bahut dhanyavaad aapka. Much ❤❤
