In todays video we're going to to pit the Naoki Mazaki Kurouchi, Yoshimi Kato Kurouchi, and Shiro kamo Kurouchi 165mm Nakiris against eachother in three different tests!

Really enjoying the comparison demo videos! Gage's knife skills are still excellent. The iron cladding on the Maz, although reactive, will also lend itself to thinning.

Another nakiri battle. This time stainless blades, Kato-san tsuchime, Sakon Ginga Zelkova in the affordable slot, and the Ryusen Hamono Tangan-ryu. The Saji rainbow would be awesome, but that is an awfully expensive blade to ask for in a demo video.

Petty battle would be interesting. Dream on that is the Saji rainbow 130, the Fujiwara Denka 120, Kurosaki Gekko and Senko ironwood 130's. Lets show some love for small, sexy knives!!!

You should try the Kobayashi. Less well known but great quality and amazing laser grinds on them!

Does the tall nakiria that was the first knife come back in stock from time to time or is it sort of a one and done thing?

Real nice video and great to see a thorough comparison. I notice you're pretty on it with wiping off the blades -- any particular tips here? E.g. you have two towels. One damp, one dry? I recently got a carbon steel clad bunka and want to keep it in tip-top shape. Thanks

We do have both a damp and dry rag here, good eye! This is a little over kill, but because we're selling these knives (at a discount mind you) we want to make sure we minimize our impact on them. At home or during my time in a restaurant I would have walked my knife to a sink to rinse it off if anything got it really dirty (onions, garlic, meat), but we don't have that option in our studio!

How much wear is on your Nakiri that you can feel the difference between your personal knife & the new knife you are testing . . . ? - How much have you worn off your Nakiri ( Blade height ) ? - How much thicker is your personal knife behind the cutting edge ?

Daniel, great questions! I don't notice much of a difference at all. I've sharpened my personal knife about 5-7 times, and done one thinning session. I've had the knife for about 2.5 years. Still cuts beautifully. I think i've taken off about 1 mm of height and since I thinned it out the blade geometry is about the same as brand new.

In the pinch grip tutorial video you said to grip it at the balance point, but here you say before. Could you clarify?

personally, I'd never buy takfu type stuff. literally any factory made Japanese knife is better object and much better value imo. the performance will be similar, long term actually easier on the factory cuz it's not hollow ground, fit and finish and overall quality obviously way higher n the factory, and then the cherry on top is the factory knife will also cost less than those overpriced things. I can't stand the way they're sold as some "hand made hand forged work of art" type nonsense. I mean cmon. These guys laminated sheets and stamp out a knife, throw it quick and dirty on the belt grinder and slap a terrible handle on it, charge $300. It's a joke. They're some of the most over rated knives out there imo. The Mazaki I've heard a lot of good things about on the other hand but I don't own one.
