hey, this is kinda outdated, this "damages the seasoning" was a problem when soaps had significant amounts of lye. Not really anymore. the seasoning is not oil, it has changed and polymerized and soap shouldnt really affect it. i would say even the spatula and steel wool would be way more agressive than the soap

Well said. All of the pressure should go trough the food, none of it trough the cutting board. Also people cutting on glass or stone tops and they wonder why the knife dulls quickly...

5-6 inch petty 8-10 inch gyuto, then after that just buy stuff to keep them sharp, that’s more important then a third knife. For a third knife I would only get it if you need one and also a long bread knife is very cheap and a good third or fourth knife. Their nice for making long even cuts. If you prep a lot of veg I recommend a Nakiri

My mother did that once. A fruit salad with garlic taste. She didn't clean the knife and cutting board well. Not a pleasure for sure 😂

You still need enough oil or Oil+Butter. And still you need to preheat the pan before frying.

Preheat the pan, hover your hand over carefully and make sure you can feel the heat radiating onto your palm, drop in a small but decent amount of butter and swish it around the pan, wait until the butter stops bubbling and then drop in your eggs. (If the butter starts to burn and turn brown before it stops bubbling then your pan is too hot) also this method can be done with oil but it can be tricky to recognise when the oil is hot enough, trial and error is key to a carbon steel pan and never give up! 😊
