A University of New Mexico study claimed that corn was essential with beans and rice. This was some sort of enzyme that improved the overall nutrition of this trio. I have a printout... somewhere and I'll try to put a link here. Thanks, great information.

Yep best way to get vitamin c! The problem with tang is the sugar and if you've got diabetes its one thing to eliminate. And the more carbs you eat the more vitamin c you need.

I'm so glad you've started this conversation about food, health and food storage. Thumbs up! I consider piling up the beans, rice and mass-produced canned food as a thoughtless, knee jerk, ape-ish response to the challenge of disaster/hardship planning. Yes, beans and rice are cheap; they store well, and they can serve as daily staple assuming you don't have related sensitivity and intolerances. But beans, rice and mass-produced, processed can foods are just a small baby step in disaster and hardship planning. I've seen rural and urban poverty overseas, first hand, and they all do a lot more than beans and rice. They often have a strong knowledge of local plants and their uses. For example. The elderly in high rent neighborhoods of downtown Bucharest, a bustling capital city, lacking income and social services, use potatoes, carrots and cabbage as their staple and supplement with "weeds" growing between the cracks in the concrete. They also take the bus to go outside of the city to gather other plants in the forest and fields. Ultimately, real food is more important than cool gear. We need to know what is real food, how to grow or find it, and how to prepare it. And how to store it. Preferably sans microwaves and shiny, stainless steel refrigerators. :P On another note, most biohackers (Mercola, John Bergman, Dr. Axe, et al.) advocate 2,000 mg of easily digesting, organic-based Vitamin C per day. Again, glad you started this and I hope to see more from you on this topic.

Yes, it is complicated. I'm taking for granted that my garden can substitute fresh food during the growing season and my home canned foods and juices will add to the monotony of beans and rice. Hopefully we will never have to turn to sustenance on only our food storage.

I think the biggest concern people overlook when it comes to beans and rice is the fact to make them digestible you need a fairly significant amount of water just to eat them, and if you want to do anything receipe wise you have to rinse and drain them and cook them in about 3x their volume in water.

Great video. I store lemon juice but pine needle tea is easy enough up here. Rice and beans is a good base layer in the Prepper Pyramid. Pineapple, etc are acidic so store those tins separately as they will leak after a few years. Mainly I plan to grow peppers and dehydrate them for the winter season.

Excellent video! In Scandinavia potatoes have been an excellent source of Vit-C for hundreds of years. Also the indigenous forest berries. both are pretty easy to process and store. potatoes can be dried or stored in a cold cellar. We puck berries each year, then turn the berries into juice concentrate for storage. thanks for sharing STN

excellent video. I actually keep vitamins in my storage which I rotate, but I've also got dehydrate vegetables and fruits in my storage as well as Tang, powdered and canned milk, sprouting seeds and oatmeal. Rabbit starvation might also be a concern.

I bought a LOT of Uncle Ben's converted rice bags and then didn't package them up but left them in their original bags. A lot of rice "expired" in 2014 and now smells really strong. I am too cheap not to use it so I soak the heck out of it and do lots of rinsing so it tastes like it should. I'm undoubtedly rinsing away the Vitamin B that is put on the rice to enrich it. I have found that if air gets to the rice the rice turns yellow. I don't think this affects the taste but it might the nutrients.

I love edible weeds and pine needle tea! Also get sprouting seeds, like mung beans, broccoli, and alfalfa. Sprout a teaspoon of seeds a day per person and eat them raw. A half-cup of mung bean sprouts contains 7 mg of Vitamin C.

Both Pinto beans and Lentils have Vitamin C in them. They aren't sufficient to get your daily minimum, but eating them regularly will definitely prevent Vitamin C deficiency from arising for quite some time. You could probably make it 6 months to a year without much in the way of supplementation. But your tip on Pine needle tea was a good one. Just one good cup of that per month would pretty much do away with your Vitamin C deficiency, if you had a good full diet of lentils and enriched white rice. I prefer lentils over beans, and so I store lentils more than any other type of legume. Good information!

How much vitamin C survives when cooking the beans? Does it all leak in the cooking liquid? I know that canned pinto beans have 0% vitamin C.

@@PrepperPotpourri Probably for most, it's trace, but it's not ZERO is the point, not if they are relatively fresh beans and not canned. But they are not enough to keep you going for more than 1 year, without some kind of Vit C supplementation. Just having some cans of fruit and Vit C supplement pills make it an easy problem to solve. I always have a 1 year supply of Vit C for my entire family.

Just planted a Norway Spruce in our yard. Should SHTF, remember all spruce trees are edible. Easy to pick a few needles and brew a tea. Not all pines are safe but Spruce is safe. My theory is, because they are painful to touch, spruce has no reason to use chemicals to deter predators.

I'm lucky here in NorCal. About 1/3 of older homes have mature lemon, orange and grapefruit trees. Most of the fruit ends up on the ground then the trash. In desperate times I'll be knocking their door, offering to pick them so they can sell them or trade something I have they may need.

Excellent video. Wild plant recognition is an amazing skill but very peculiar to the environment. Where I grew-up, I could recognize those plants with absolute certainty because that knowledge had been passed on to me by elders at a very young age. Where I live now, I hardly recognize anything and I find it very hard to find local people that recognize those plants simply because no one imparted that knowledge to them growing-up. People just pop a pill and move on. No one makes a tea to cure a headache or to stop diarrhea or to make an astringent mouth wash.

You could live off beans and rice but as you have pointed out the body would suffer. The unheathy amounts of weight lose as well as strength leaves the body susceptible to illnesses. I keep proteins and other sources of vitamins in my diet to avoid this. Excellent content. The table you have presented is very informative information. Thank you for sharing. terrific information, honestly something I never thought about. My concern is shelf life. As much as I like to can I would think C tablets would last longer if stored properly and take up less room than drying and canning fruit. Also with hubby being diabetic he cannot do the sugars, especially if shtf. he has a small surplus of some meds but he is on several, and would have to be super careful, hoping the shtf event was short term, if long term dunno what has will do =(

If there is no gas or electric, you can't cook beans (2-2.5 hours) very easily. Easy to store, extremely difficult to cook.

While I admit beans and rice alone are not an ideal diet, the information about vitamin C I don't believe is accurate. I can personally attest that two months without any food containing vitamin C will not give you scurvy. This last week I had a physical and blood test which showed me to be very healthy excellent levels on my lipids Etc. Oh, and by the way that was after 45 days of water fasting, 5 days of beef and butter only, and another two days of water fasting.
