FYI: That sponsorship does not actually grant you land ownership on purchase. It's one of those novelty scams. They don't actually purchase the land on your behalf since that land titleship is not allowed in Scotland due to the small size of the plots. The title thing is also bogus since titles aren't bestowed via land ownership. I definitely don't blame you for taking the sponsorship. Just wanted to let you know.

They also don’t even plant the trees like they claim. They’ve had quite a bit of legal issues in Scotland for fraud. They have bankrupted then came back with a new name several times because of it.

Greetings, I have also experimented with pineapple and raw sugar, obtaining a very aromatic and fruity rum. I usually add orange peel and cloves to the ferment.

I chopped up about 8 pineapples and tossed them directly into the scalding got sugar water. (I wanted to weaken the wild stuff in case it was the wrong kind of funky.) 5 gallon bucket full got 2 packets of my favorite fruit-wine yeast and I let it ferment dry. The liquor fairy brought me back the tastiest thing I've ever had.

Another method to do this would be to make your normal rum and tepache separately. Do your rum run, pasturize and filter the tepache, and use the tapache to proof your rum

Man I envy you. My likker fairy just has a 6 liter stock pot with a homemade cap and Liebig on it. Also my likker fairy has a bunch of family who lives with him, and it wouldn’t be prudent for him to create likker around his family. ;)

My experience: I followed the recipe, except I didn't dare to allow the wild fermentation and used Still Spirits Rum Distiller's Yeast (amazon) right away. Fermentation went perfectly, the wash got below 1.000 within 3 days at 25C (I am at a high altitude). Hypothetically one could use a single still run with a thumper filled by 1/5 with fresh pineapples & some wash. Now the interesting part: during the cuts, I was somewhat disappointed not to find the pineapple in either of the jars (not in the heads - except that really artificial 'pineapple' typical for heads or even foreshots, not in the hearts and definitely not in the tails). However, after mixing all the hearts together - the pineapple re-appeared and this time it is the 'real' pineapple!! Very cool! Thanks!!

Any distill product (rum, whiskey, brandy) comes out clear from the still. It doesn't turn brown until it's aged on wood;-)

I’ve always been too nervous about wild fermentation to give it a try. Too many toxicology, poisoning, and WMD classes during my time in EMS to trust mother nature not to try and kill me. Oh well! That sugar is a win though in my book! Will be getting me some of that soon.

You can fake a wild fermentation with commercial yeast and yogurt, or a store bought strain of brettanomyces.

I am definitely going to try that. There are lots of pineapples available here in Jamaica. I just did a jackfruit wine that I will be distilling into a brandy. Jackfruit lot of the yeast and the yeast love the jackfruit. At fermented down 2 below 990 and I started at 16 and a b percent potential. I'm hoping I get a good outcome from the distillation. I will let you know

I have been wondering about something like this for a long time. Naturally fermented beverages distilled are very interesting to me. Not sure if its been on here yet, but kombucha would be another beverages that would be cool to distill.

i just finished 75 liters of pineapple wine. drank it in 2 weeks. 3 sweet pineapples per barrel and 8kg of sugar, dry.. think about that.!

Milord, me thinks the piloncillo is quite dear, or “expensive” for you colonists. I love the idea compared to struggling with big bottles of sticky molasses, not to mention the whole slave trade tragedy. I will now bow deeply and back away from the thrown.

So if you bought 4 plots in a big square ⛶ you'd have a kingdom and everyone within the boundaries would be your disciples by way of living within the confines of your kingdom. Then instead of being a lord you'd be a king and all those minions would have to bow to you and become your rightful servants.

Sorry, but Established Titles is simply selling you an expensive piece of paper. The ownership of the land and the title Laird means nothing. I live in Scotland, work in conveyancing and discovered this several years ago. Read to the end en.wikipedia.org/wiki/Laird

It's just the same as those who sell land on the moon, the naming of a star or make you a minister of a religion. As long as you realise all you are getting is a pretty bit of paper with no real rights then you're fine.

Yeah, it can get crazy. I usually try to drink up the tepache by day 4-5. After that it gets too tart for me. The rum wash was way better though. Didn't get nearly as tart, probably because it was fermenting a lot longer and it didn't sit for long before it went to the liquor fairie.
