I love hoecakes cooked in bacon grease and topped with butter. The bacon grease is all-important. If I want it sweet, I'll pour maple syrup over it or spread buckwheat honey on top. But I mostly prefer them with bacon and eggs, where both the hoecakes and the eggs are cooked in the grease from the bacon. Heaven ❤

Milly, I love your version of the hoe cake. I will be trying it. I usually make hot water cornbread . My kids I should say my grown adult children ate it when they were younger, I guess because they had to, as they got older they prefer my cornbread. Maybe me fixing it in this way when I serve it with a Collar greens for Christmas they will come back to it. Thanks again.

Mom used to make hoe cakes as a way to stretch the flour. Flour was harder to come by. She would use sometimes half and half. As the flour ran out the hose cake got more corn meal.

What are the measurements on the dry ingredients? My mom (from the south) made these and I LOVED them! I haven't found a recipe quite like hers, and she didn't pass it down before she passed. I don't remember there being any sweetness at all, they were savory. And I think bacon grease was involved... 🤩😋🥰

Every family has their own recipe. No one’s is better than the other. I don’t make sweet Jonny cakes and I don’t use eggs. I feel eggs make it more like cake, I replace the eggs with vegetable oil and I use 3/4 cornmeal 1/4 flour ratio sometimes, I also use powdered buttermilk or powdered milk and baking powder. I use the water ratio the buttermilk calls for but mine are much thicker and I don’t rest the batter, I want lift. I usually use animal fat as well. If I make a pot of beans, there has to be cornbread or these cakes. And this is also my cornbread recipe. I also will smash the cakes in a tall glass and top it with buttermilk or milk and eat it with a spoon.

​@@sfowler1017 Obviously. But the fact she doesn't know the difference which costs her all credibility. And the fact that either no one at Food 52 caught it, or worse, they saw it and didn't care, during the editing process costs Food 52 their credibility.

They were cooked on a hoe back in the day, often by enslaved people working in the fields. The hoe was heated over the fire and used as a griddle
