In this episode of In The Kitchen with Matt, I will show you how to make Belgian Sugar Waffles, also sometimes called Liege Waffles. They are very popular here in Phoenix where I live, we have Waffle food trucks that drive around selling these amazing waffles, with all kinds of different toppings. Belgian Sugar Waffles recipes are different then a classic batter waffle recipes. They are made from a yeast based dough instead and have an ingredient called pearl sugar in them. The name "Sugar" waffle comes from the pearl sugar. If you have never tasted one of these before, you are missing out. :) So now you can make your own, if I can make them, you can make them, let's get started.

Ingredients:
3 1/2 cups of all-purpose flour (420g)
2 1/4 tsp. of active dry yeast (1 packet of instant yeast will work too) (7g)
3/4 cup of warm milk (1%, 2%, Whole, etc. 100 to 115 F.) (177mL)
8 ounces or 1 cup, softened butter (226g)
2 large eggs
1/2 tsp. salt (2g)
1 tsp. vanilla extract (5ml)
1 8 ounce bag of Pearl Sugar (225g):amzn.to/2PPMiyS
Tools:
waffle iron
wooden spoon
bowls
whisk
tongs or fork
dough cutter or knife
plastic wrap
Be very careful when cooking these waffles, the sugar gets really really hot! Don't touch the sugar in the waffles. :) And let them cool a bit before biting into them.

Thanks for this. Just remembered that my great grandma had a box of these Costco bulk style and I would eat them all the time for breakfast while visiting. The crunch of the sugar pieces inside the waffle is still something I can remember. Going to have to make this asap

You are welcome Brick! Growing up I had never tried these, we just had the classic batter style waffles. Then when I moved out here they had Waffle Trucks that would drive around and sell these kinds of waffles, then of course I had to learn how to make them. lol

Other than the pearl sugar, I don't put any sugar into my recipe either. I love to eat them plain with the caramelized pearl sugar -- so yummy. Thanks for your video Matt. I just remembered that I put about 1/2 teaspoon regular sugar in with the warm milk and yeast.

You are welcome, Mark!! Yeah, it doesn't need any more sugar in the dough since the pearl sugar is enough. I typically add a little sugar to the yeast mixture as well.

I made the recipe with pearl sugar it was great but topped it with semi sweet chocolate melts - omg it was amazzzzing I high recommend the choclate topping with this recipe

Thank you! I always use unsalted when cooking and baking, but you can use salted as well. If you do, just reduce the amount of extra salt added by half. :)

hi.. what if i can't find any pearl sugar or sugar cubes, how many tsp or cups of granulated sugar do i need? in replacement of pearl sugar

Hi there, there is no real substitute for pearl sugar, for authentic Liege waffles. If you want to use regular sugar, I would do 1/3 to 1/2 cup. Although I never make them that way, I am just guessing. (67 to 100g.)

Hi there, it will melt a little bit but not too bad. It depends, the waffle irons we have in the States don't have a specific temp, they go by numbers. But the medium (4 or 5) setting is what I use. You will just have to experiment with your specific iron. Some waffle irons here, don't even have a temp setting, it is just one temp, haha.

@@inthekitchenwithmatt I let my electric waffle iron heat up for at least 5 min. before adding any dough. My iron is on or off -- no settings. The bottom line is that the iron should be hot.

@@markferwerda7968 Yeah I find a lot of them are like that. I wish I bought more of the ones that I have. Back when I bought it they were like $80 at Bed Bath and Beyond, now this exact model is hard to find and if you do find it it is like over $200!

Yes you sure can. Just store them in the fridge. Then they can heat them up in the oven.

Hello! Yes you sure can. :) Just make sure it is in a ziplock bag or an airtight container. It will last a few days in the fridge. You can freeze the dough as well.

Ah can anyone tell me the difference between these and the normal Belgian waffles? Is one sweet and one savoury? Which is most like what dessert places do

Hello, Sarah! No the difference is these are made with a yeast-dough and pearl sugar, completely different taste then classic American style Belgian waffles which is made with a batter. They are both meant to be sweet. :)

Either is fine. :) I always use regular active dry yeast.

Not in these particular waffles, you really need the yeast. But you can make traditional batter waffles which don't use yeast. kzfaq.info/get/bejne/i9qKqqmim9THn4k.html

In this particular recipe nothing. But you can leave the eggs out. You will need to use a bit less flour though. The dough won't taste quite as good, however.

Yes they do, they sell the Swedish Pearl Sugar, which is a little different then the Belgian Pearl Sugar, but it will still work. :)

They came out a lil too heavy so i made them small they were tasty tho kids loved them .....I didn’t wait for the yeast as it was a fresh batch

Hi Matt, try to put +/- 10% less butter in the dough, melt this butter gently, don't let it heat, put all the pearl sugar in this butter, let the butter melt in the sugar, and then mix this sugar in the dough, best regards and have fun with your cooking videos keep on baking! Marc Vogels

Hi Marc! Nice tip, the ones we get here in the States always have the big chunks of pearl sugar in it, so these are like those. But I will try your idea next time I make them see how I like them. :) Thanks for sharing!

The sugar they add into the milk before adding the dry ingredients is to help the yeast activate not for sweetness.

What are you talking about Joe? Yes, a small amount (1 tsp.) of sugar is added sometimes to the hot liquid with the yeast. Milk has natural sugar in it and doesn't normally need extra sugar as food for the yeast. The sugar I talk about in this video is for the sweetness of the dough specifically, the reference to the other recipes was specifically about the overall sweetness of the waffle dough and is added after the yeast has already been activated.
