In this episode of In The Kitchen With Matt, I will show you how to make Liege waffles also known as Pearl Sugar Waffles, or just Belgian Sugar Waffles. This Belgian Pearl Sugar Waffles recipe is awesome and easy to make. They taste different than classic batter-based waffles and have seen a popular rise here in the United States over the years. Here in Arizona where I live, there are Liege Waffle food trucks that drive around serving these amazing waffles. The Liege waffle come comes from Eastern Belgium in the city of Liége, imagine that, haha. They are a richer, denser, sweeter, and chewier waffle than a classic batter waffle. Ingredients:
3 1/2 cups of all-purpose flour (420g)
2 1/4 tsp. of active dry yeast (1 packet of instant yeast will work too) (7g)
3/4 cup of warm milk (1%, 2%, Whole, etc. 100 to 115 F.) (177mL)
8 ounces or 1 cup, softened butter (226g)
2 large eggs
1/2 tsp. salt (2g)
1 tsp. vanilla extract (5ml)
1 8 oz bag of Pearl Sugar (225g):amzn.to/2PPMiyS
Tools:
waffle iron
wooden spoon
bowls
whisk
tongs or fork
dough cutter or knife
plastic wrap
Be very careful when cooking these waffles, the sugar gets really really hot! Don't touch the sugar in the waffles. :) And let them cool a bit before biting into them.
