I am happy to find this recipe. Later this week I'll be having some students over for dinner as we remember our trip to Belize this past January, and wanted to make coconut beans and rice. Thank you!

Hi Sandra! It was great! I did have to add some extra liquid (used water) so the rice wouldn't stick to the bottom of the pot, but it was delicious and the students loved it :)

FYI the rice water is amazing for hair growth. Mix with your favorite conditioner a put on hair fo 1hr.

Yes unsweetened coconut milk.
