Going to Bulgaria? Then you must try Banitsa!!! This traditional pastry is one of the most popular dishes within the Bulgarian cuisine and the staple of the Bulgarian breakfast. Being phyllo-dough-based, Bulgarian Banitsa is a type of burek (börek) and it comes with a broad range of fillings; the most common are different cheeses (most often sirene cheese), spinach, minced meat or a combination. There are also sweet fillings, for instance apple or pumpkin. This calorie dense pastry is inexpensive and thus makes for the perfect street food. Banitsa can be found across the country, and for the Bulgarian capital Sofia - at bakeries in every corner. You will love this Bulgarian food dish, trust me! However, obviously there are more to the Bulgarian cuisine than Banitsa. Don't forget to try Shopska Salad, Tarator soup and Kebapche at the least.

And what about the Bulgarian capital Sofia City? Surrounded by mountains, Sofia is located 550 metres above sea level. The scenary is beautiful when strolling the streets; Vitosha mountain can always be seen in the distance. The high elevation results in relatively large temperature variation between day and night, with days being hot and nights being somewhat chilly during the summer months. There are many attractions and sightseeing spots and all are within walking distance - visting Alexander Nevsky Cathedral is a must. Adding friendly people and inexpensive accommodation and food makes Sofia the perfect European summer travel destination.

great video. in bulgaria we do not really do minced meat Banitsa. it exists but it is not commonly eaten. i compare here to our neighbouring countries. Byurek for us is a certain kind of banitsa, so we do not use it as a general word for banitsa. Kudos for trying the boza! My personal favourite is luchnik, banitsa with leeks. you can practically put anything in banitsa, including rice and potatoes!

Ah yes, you found one of the best Banitsa in Sofia. I used to go to this place after school with friends. This particular joint has been around since 1890ties. They used to also sell buffalo yogurt too but I think they stopped a decade ago. It goes very well with yogurt.

boza is basically tudor beer, or some medieval low alcohol fermented drink like that. it kind of smells like beer or weed

"This one is a tough one for people that are not from Bulgaria" I am laughing :D Actually there are few places left in Bulgaria where you can find nice boza. In fact the home made is the best. It's made of wheat flour, water and sugar. But I am not sure that normal people would like it anyway.

Thank You for reviewing the "boza", it was the favourite beverage of the Janissary regiment of the Ottoman army, has a very low alcoholic content! When you buy it nowadays always avoid the "modern" one with the aspartame, the E preservatives and the other bad stuff ! It must contain only barley, water and sugar and to ferment in the other day even in the fridge! Great channel🥂

You should try banitsa with leek or with pumpkin in the oven. Just irresistible. Btw, it's pronounced "buza" with a shorter "u" and a slightly open "a" so it'll be something like "b-oo(short oo) and then za like in Zaire. Fun fact is that it's written with an "o" but it is not really pronounced as bo- but rather bu. Nice video and next time you try more Bulgarian traditional food.

Next time you visit Bulgaria - travel to eastern Dobrudja and ask where to get homemade "mlechna banitca" (yogurt banitca). Totally different taste ! ;)

Wow this is a really surprising video for me. I never knew Bulgaria too has boza. If you have chance to visit İstanbul try boza at Vefa Bozacısı. I think it would be interesting if someone who is not Turkish or Bulgarian reviews and talks about similarities and differences. By the way, we don’t drink boza with börek (which is Turkish kind of burek/banitsa). We prefer ayran -yogurt drink- or Turkish tea with it. Cheers.

I think pretty much the whole Muslim world has boza. I am not sure about Northern Africa, but in Central Asia they have it too. Ayran is better with banitsa, but boza is fine as well.
