It's because he doesn't have any real acceptance at home. His parents are so wooden they don't share the things he takes joy in. He's always looking to fit in somewhere, and his parents always sour his fun. I think if they just made an effort to actually like their son rather than be disappointed in him because he's young, things might be different.

What i like about him is that he brings a lot of context for bills general behaviour and quirks. Hes like a foil. We know bill has a strange feminine streak like liking how silk feels on his skin and the "pretty pretty dresses" line plus him joining the chorus in that one episode, but most importantly, both bill and gilbert LOVE misery and cant even comprehend being happy, plus neither are family men at all. The difference is that gilbert makes the misery work for him, he knows how to style it so makes him more mysterious and cool and untouchable, while bills misery is gross and lame.

Gilbert however never believed in love and used his lusts as a coping mechanism, as he knew that regardless of his family's toxicity that it was the best life he was ever going have. This is also why I love the credits to Bob's Burgers. It's a nice reminder that for all the shenanigans of the episode; they do run a business and a lot of time is spent helping out with it. I find it very heart warming that kids help with basic stuff like napkin folding, setting plates, or refilling the straws. (Yes I'm aware that more recent seasons throw in gags during the sequence.)
