Thank you for this video. I live in Italy and found the more expensive one at 59 euros. It is not available anywhere else, I guess your video made it a popular choice. People need this type of video made by you, an expert, because we don't have the money to buy such expensive items and you helped us find something that is not a toy or so cheap it is not useable after a little time. Also, your explanation was clear and concise and I could see that you were not trying to make the video longer so you make more money that way. I applaud your video. Bravissimo!

Knife is Life! I would definitely like to see more videos like this one where you review affordable or even higher end knives. I'm looking for a good all around knife set right now... but from this video I realized that I like my knives to be individually different. Most likely getting the Famcüte Santoku and Utility knife as I already have a Dalstrong Phantom chefs knife that's been working great so far. Thanks again for this!

“Knife is life” Forge to table is my friends brand from Johnson and wales in Rhode Island. Knives are forged in China from small forge where the blacksmith was originally taught in traditional Japanese style.

No he didn't because Josh has an ACTUAL Japanese knife not from China, made my Makoto Kurosaki, these are garbage Chinese knives with questionable steel and possible lead contamination (use a kit, all 3 of my chinese "gyuto" failed the lead test) A Takamura R2 is $180-200 and shits on anything he showed. These don't stay sharp either, because it's Chinese variant of VG-10 not actually VG10. Educate yourself, use r/chefknives and read the info provided. It's like Pakistani Damascus, it's just fake garbage. ANYTHING can sharpen to shaving sharp, staying that way is proportionate to the carbon content in the steel with a few other contributing factors. OP is a great tuber, and great chef, just isn't educated in steel. Not his fault.

Use a circular motion. You wont see it around alot but i swear by this and i literally have to warn people when they pick up one of my knives. Also you can save money by getting seventies stainless sets of serrated edges and sanding down the points with a dremel. Handles are easy if you make the knife a little shorter. Bottom line stop buying as many things and good job stepping up to DIY some stuff. Your effort is more valuable than your money.

@@benbroeckx1905 I just meant old used knives in general. If you get stuff that's from the few post war decades there's still a solid chance it was made here in North America and while older steel doesn't have as many cool properties neither does cheap knock off steal from mass produced modern knives. I'm super into yard saling and refurbishing stuff. The pandemic has been a bummer for that kind of thing but I'm holding out hope for next spring.

@@benbroeckx1905 I bought a wusthof just to try out a top quality knife but honestly if you're looking high end I suggest researching a local culinary store and keeping an eye out there for a sale. The sticker price of anything branded is huge compared to the actual retail cost so sales aren't uncommon. I prefer the western style of knife the blade is heavier and more rigid, but a buddy of mine has a set from Tanaka that I cooked with once and they cut very well.

"knife is Life" I worked in japanese restaurant while I was in junior college 25+ years ago. I know how much chefs value their knifes. I would love to see another video about how to use it (how to cut with minimum damage to the edge) and taking care of knife. Love to see how to sharpen the knifes as well. I have seen chefs sharpening their knifes for hours. I'm also outdoor person and love all your videos.

Nice review! This makes me want that VG10 one. My brother got me a Famcute Nakiri for my birthday and it was razor sharp out of the box. The sharpest knife I've ever had. I'm borderline vegetarian so I use it almost every day and it's great.

I'm glad I watched this. I've had an eye on that middle knife for a while, but if it's blade heavy then it'll tire you out quickly quickly! I don't think I'll be picking it up now!

I just added a new comment about the knife... The damned thing doesn't have a tang! It has a knob that is glued in to the handle. The knife is currently not available on Amazon as Famcute... They switched to FINDKING... If you did end up buying it... Please be careful - it's dangerous! Don't believe me? Look at the pictures that customers have posted under the 1-star reviews.

I bought the Famcute. It’s funny but the difference between it and the cheap Walmart knives is insane. I absolutely love it and for the first time have really taken care of a kitchen knife.

Good review, well done and lots of info. For $45 to $85 you can get a real Japanese made knife with Japanese steel. Something like a Tojiro DP, Tojiro Shirogami, Fujiwara FKM, Yohinko VG-10, or a Fuji Nanihira. I always recommend a Tojiro DP Gyuto 210m ($80) if you want stainless and a western handle or a Tojiro Shirogami Gyuto 210mm ($70) if you want a wa handle with carbon steel.

If you give it a good sharpen it will cut that good, just wont hold a good edge for as long as a more expensive knife would.

are you referring to the $20 8" molybdenum/vanadium stainless steel chef knife? They use to have a better one around $50. that they did not sell online, cause they wanted people to come to the store.

Knife is life , I was given made in Japan Interpur stainless steel chef knife. It was used left behind in apartment where my friend is the maintenance man. It was very dull and abused but I was shocked how easy it was to sharpen I mean razor sharp edge with very little work. It has since become my favorite knife .

VG10 is a much better steel than the other two. It isn't a super steel, but having vanadium and being a powdered steel makes it quite nice if you don't want to shell out hundreds. The addition of vanadium and the sintered powdered steel process makes for a fine grain structure that takes a nice edge and is fairly hard so the edge lasts.

Hey Taku, Big fan of the videos that you've been putting out! Watching your stuff has definitely improved my filleting and sushi making skills (among other things). Be that as it may, I am looking to buy my first Gyuto chef's knife. In particular, I would like to find the best value that I can for less than $150. This video definitely made me interested in the 8" Gyuto (Japanese Style) Chef's Knife, but the knife doesn't seem to be available anywhere right now! Do you have any other suggestions? I'm an avid fisherman as well and I appreciate the input! Dan

*The ACTUAL test would be, when you don't know the price of the knife, and you don't see the packing/boxes. You test and rate the knife by feel/performance, and ONLY THEN, the prices should be unveiled to you.*

I bought that famcute 2 years ago and have been using it as a full time line cook the entire time. It's still my favorite knife while the zwilling 8inch french drop point chef knife I bought on sale for 175 remains at home. Also got the 6inch vegetable cleaver from Famcute and its also still going strong. It's ridiculous how much they overperform for the price

Knife is life! Great video. Got some great tips. I'm a noob, so I got my lady a starter set of Shun knives. (she's been exploring cooking and has made some awesome stuff in quarantine. I'm so lucky). Good advice w the takeaway of veggies w the back side of the knife to preserve the blade. Any brand preference on that fancy softer chopping board?

I would certainly be interested in a similar video for the next tier or two knives. Like maybe a $150-$250 and a $400+ tiers? Just so I could really see the difference in an experts hands.

I'd love to see an update on this video concept for the new year! would be a fun challenge if you could find more great budget knives for us beginners the $72 Forgetotable has gone up to $119 from what I can see

I own the Forge to Table (VG10 steel one showed here) and I notice that the blade itself can be poor out of the box. Even a 2000-grit stone treatment makes it a really nice knife. They make a slightly smaller one like 6-inch or so and it's so incredibly light that it's a ton of fun to work with.

I bought one after watching this video and have been using it daily since. Super light and the edge holds pretty well considering I use one of those cheap plastic whetstone wheel sharpeners lol. Honing keeps the blade pretty straight and I only need to sharpen once a month.

Relative to professional chef knives it is cheap. Quality kitchen equipment can be used for 20-30 years so the upfront cost is insignificant. You might buy a nice cast iron pot for $120 and use it for 60 years so the yearly cost is $2.

Sorry but this video is bullshit. There are plenty Michelin Star chefs using an 80$ knife as their main knife every day for 20 years. Especially European knives are cheaper but at least as good (especially German knives) as Japanese knives and for most home cooks in Europe & the US they have a more familiar shape that is easier to handle. My knife is about 220$ but it's also because I like the (Japanese) brand, I like the style and it just feels good using it. Compare it to a 80$ Wüsthof Classic Ikon and they probably are at a similar level - completely different knives with different strengths and weaknesses but equally good.

@@BB-kw5bz yes i am french and think exactly like you. i m using japanese knife and i have many wusthof excellent made making. But so big pleasure using my japan knife. A lot of french cooker use global brand knife, me i don t like it so much....

For what he paid for all of his knives, I wouldn't want to know how similar $40 stacks up to $350. A chef's knives are also like a business suit, to impress other people. My 2003 Caravan gets me to work as well as a new BMW.
