Instead of just watching and doing nothing I went out and bought the ingredients for this meal today. What a success we had it for our evening meal and all the family really enjoyed it it the flavour of the meal was sublime . Credit where credit is due you guys are doing excellent food and presenting in a way that an untrained person can follow and achieve well done.

I *love* this channel. I think the things I like are that... 1. It's about the food, not the person cooking it. 2. I like the camera work and suspect the camera used is reassuringly expensive. 3. It has a simple, uncomplicated charm. Do something well. That is all that is required.

The knife looks like a modified cleaver, but made of high carbon steel I think (looks like a patina on the knife). You can always get a Chinese Chef's knife (cleaver) and have a corner of the metal cut, then sanded smoothly. It balance out the knife better.

I am having mine made, no one has this knife, so I designed my own and commissioned a knife maker. OH, it's expensive, and takes 12 months to get. let me know if you want one.

I believe that those were, what I would call a Pork blade steak. I find these to be the best steak cut from pork. It seams to have the best balance of fat to meat for steaks either on the flame or seared in the pan. Another fantastic portrayal of how simple it is to cook great food.

Suggestion: I do pork chops with salt/pepper/ground ginger. Sear & fry in pan... for the last 30-45 seconds in the pan add a splash of some Indonesian sweet soy (Kecap manis) and a little flip to coat both sides. Keep an eye on the goings-on in the pan as the soy sauce can easily burn, depending on temperature of course. Rest the chops for a few mins & enjoy.
