I used to work in a restaurant where in we boil chicken stock (with mirepoix) in a pot half of the size of my body and what i tend to do is to put lots of chinese cabbage trimmings in it and i'm telling you guys chicken stock with chinese cabbages tastes incredibly better than a normal stock with only carrots and onions in it.

I use this style recipe for Low budget healthy meals. This style can change into many other soups dishes n Japanese stew curries etc. the best basic soup. Add some soya beans very delicious

"Yangzhou Lion head"! I lived in Shanghai, not far from the city called Yangzhou so normally I wouldn't be surprised by the cuisine near my ciry. But I was really really surprised and impressed first time eating this dish. Better than any meat balls I ever ate. So soft and delicious, and actually not expensive, really recommend all visitors in Yangzhou or East China to try it. This dish can go beyond your imagination!

no, this is a signature dish Yang Zhou Lion Head, Chinese dishes are meant to be cooked for long hours, some even for days, you can put it in a slow cooker and let it simmer it's not bothersome anyway. cut down the cooking time by making the meatball smaller? you think we don't know that and need you to teach? lmao, how ridiculous....

Reminds me of pinoy almondigas. Instead of the assorted veggies it has loofah gourd, dried small shrimps and mee suah noodles. Topped with chopped spring onions if you feel fancy.

This is just what I think, but I think you need to add in some fat from other sources (if you don't eat pork, maybe you can use duck fat). Remember the pork was 30% fat, so if you sub in chicken you'll need to get 30% of fat from somewhere else, since chicken is so lean.

Two technical questions: how is this cooking style called? Looks imperial to me. :-) And, why this huge knife? Besides the skill and training, it's traditional or the shape has a practical utility a smaller knife doesn't have? Great videos!

Hi Maria, thanks for the feedback! The pork meatballs does indeed has a long history, and legend has it that it was prepared for an emperor in Sui dynasty by a chef from Yangzhou. The knife that John uses is called a Chinese cleaver, it's quite versatile, you can use it to cut, chop or smack ginger and spring onions.

When we make meatballs at home, we make much smaller ones and only simmer for about 10 mins. Also, extra white pepper and salt can make the soup more flavorful.

It wouldn't be the same. Simmering for 4 hours melts the fat and results in a melt in your mouth texture

Can the Chef confirm simmering for 4 mins and not 4 HOURS ( as the subtitle suggests). The cabbage cannot be look like that if they cook for 4 hours. The meatball will become iron balls after 4 hours.
