Boiled Peanuts are a go to snack in a lot of cultures, the American South - where you'll find them in gas stations, the Philippines, Thailand, China, Vietnam, Ghana and other African countries.
It's a delicious snack you can make at home simply by putting them in a crockpot and keeping it going for at least 24 hours to soak in the spice and soften up. It's low effort but the results pay off.
Give this recipe a try and you won't regret it.
In a 6 QT slow cooker:
Wash and rinse 2.5 lbs of in shell raw or green peanuts
Fill the pot with enough water to cover the peanuts
Add spices:
1/2 C Kosher Salt
1 Bag of Zatarain's crab boil or other boil mix
2 T Chile powder
2 T Black pepper
2 T Cayenne (dial back if you don't like spicy)
2 T Crushed Red Pepper
Turn the pot on high, generally 4 hours, then 10 hours overnight, make sure to add water when needed and taste to see if you want to add more spices. Let them go for about 24hrs like that.
They can either sit in the crockpot for a day or two on warm if they last that long, or can be sealed up with a bit of the juice for 3-4 months in the freezer in a ziplock bag, reheat in the microwave.
