I am a big fan of Sichuan food. I frequent China alot, and Sichuanese cuisine is prevalent in my country as well. BUT, after I went to Chengdu ... I realized, nothing else measures up to their versions.

Most people don't realize the last dish is the authentic version of Kung Pao Chicken. Notice the bone stays on in the small pcs of chicken. Would love for Mike to show their tofu dishes like the common Ma Pao Tofu (Szechuan province makes some great tofu, maybe their soy bean variety is different, who knows). In my opinion, authentic Szechuan dish is the BOMB (especially their pork, breed of pigs over there are like Berkshire but still distinctly delicious), very intense and flavorful. Unlike spicy food that burns your stomach (and then some on the way back out), this type of intense heat and spice clears up all the orifices inside your skull, makes you feel alive after a good sweat even in the heat of summer, especially when it's humid to boot. Also local mushrooms from Szechuan province is very interesting, it really balances out the heat at the end of a meal if taken in soup form.

I love that he's like, the only person who says "uber" anymore. But I think it's REALLY funny that he actually says it and gets away with it, without sounding like a total dork lol. ^-^

The next time you come to Hong Kong, you have to go to Mong Kok and go to 樂天皇朝 （Paradise Dynasty) and try their water braised fish, it is numby and spicy at the same time with LOADS of 涼皮 noodles
