Its really not the way normal pan works .. just that stall .. maybe because you can clearly see the syrup shuts down the fire .. and he makes sure noone burns themselves i guess for his own sake Pan with tobacco specially is kind of a disgusting habbit but its prevalent in our society.. Sweet paans are great after a hearty indian lunch or dinner (most common in wedding parties etc) butyou can get it anywhere and everywhere as people do eat it whenever they feel like shoving mouth with sweet minty goodness .. most times it is overwhelming but it surely grows on you after a few times.

Hands are not dirty it's a colour of kattha which paste he was spreading on paan you can't remove its colour easily that's why his hands is looking dirty even it takes 3 or 4 days to completely remove from hands and he is doing same work everyday so its not possible to remove
