BETH'S SCONE RECIPES
Each Recipe Makes 8 scones
INGREDIENTS:
2 cups flour
2 tbsp sugar
1 tsp salt
1 tbsp + 1 tsp baking powder
10 tbsp unsalted butter, very cold and diced into small cubes
½ cup of heavy cream
1 tbsp vanilla
2 eggs
FOR RAISIN SCONES:
Add ¼ cup black raisins and ¼ cup golden raisins
Egg Wash
1 whole egg
SERVE WITH: Twinings Apple Spiced Chai Tea bit.ly/1mTL7Oy
METHOD:
Preheat oven to 400F.
In a large bowl whisk together the flour, sugar, salt and baking powder.
Then work the butter cubes into the flour with your hands until a coarse meal develops. Then toss in the raisins and mix gently with your hands to combine.
In a separate small bowl add the heavy cream, eggs and vanilla and whisk with a fork until combined.
Create a small well in the center of the flour mixture. Pour the cream mixture into the well, and stir with a fork until combined, and then change to a large wooden spoon.
Turn the dough out onto a floured surface. Form into a disk, cover with plastic wrap and refrigerate for 30 mins, or pop in the freezer for 10 mins.
Once chilled, roll the dough out to ½ “ thickness. Cut out scones with a 2” round biscuit cutter and place on a parchment lined cookie sheet.
Then whisk 1 whole egg in a small bowl, then with a pastry brush lightly glaze the tops of the scones with the egg wash.
TIP: To assure your scones retain their shape after they are baked pop your tray into your fridge for 15 mins before baking. This will re-chill the dough and allow them to bake up in a more uniform fashion.
Bake for 10-12 mins until risen and golden brown. Serve with butter and jam alongside your favorite tea!
FOR CRANBERRY ORANGE SCONES:
Replace raisins with ½ cup of Cranberries
Add 2 tbsp orange zest with the cranberries
Glaze with heavy cream and turbinado sugar
SERVE WITH: Twinings Orange & Cinnamon Spice Tea bit.ly/1rnqMkw
To form triangle scones:
Roll dough into a square, ½” thick. Cut in half vertically, then horizontally. Then cut each little square diagonally to create smaller triangles.
Transfer to a parchment lined cookie sheet. Glaze with heavy cream and sprinkle with the turbinado sugar.
CHOCOLATE CHUNK:
Add 3 oz of chopped bittersweet chocolate at the coarse meal stage. Mix to combine and proceed as directed for basic scone recipe.

Hi Beth! I love scones. I work at a cafe where I bake scones every morning. The way that we prep as much as possible while keeping things as fresh is possible is to keep all of the dry ingredients in a sealed container, into which we grate the butter with a box grater (it's a lot of hand grating but really works well). As a result, the butter+flour mix is chilled over night which makes it an easy task to fold, cut, and bake the scones in the morning. We also have our ingredients for the flavour prepped in small and separate containers to add in the crumb stage, as you did here.

I love how informative and detailed your videos are - many of the things you point out (such as the fact that it's best to pop the scones back in the fridge in order to help them retain their shape once they bake) are so useful and add to the general knowledge base, which is always a good thing :) keep up the amazing work!

Beth, I remember I have seen a video somewhere that in order to ensure the scones raise evenly in the oven, you got to press the cutter straight down instead of twist and wiggle the cutter. I'm so going to try out your recipe soon! I love scones!

Ooo! I'm always looking for a good scone recipe, I'm addicted to the things but have never really been able to find a good recipe for them that was flexible, it mostly was just for one kind of scone. I love how you made this recipe so no matter what you add you are able to still create a lovely scone! I think I may try this recipe with some vanilla beans and put on a glaze afterwards for a sweet scone, I had something similar to that once and I fell in love with it so if I can make it myself at home all the better! I'll probably be using this recipe often to make some for my family, my dad, mom and I all love tea so I think the sconces would make a lovely additive to our evening tea. Thanks for sharing this recipe! :D

I loved this video! I love hosting tea parties :) I would pair a cranberry and orange scone with an earl grey to bring out the bergamot. I missed having tea, I'm so glad it's getting chillier in California!

Hi Beth! I love this recipe.. and now my friends love it too after they tasted the goodies :) I like how you always explain the process and not just assume we know the details... It's great! And that is why i want to ask you for a Praline Recipe. I know there are a lot out there - but they seem so very complicated to follow! Mmmm.... I love scones. And I love tea. My favourite are raisin scones, but I also like savoury cheddar cheese scones. For some reason I like to put jam in cheddar cheese scones, while I prefer the raisin ones just with butter.

My mum makes Scones all the time. Its a very Kiwi/ British thing to have scones. :D I have eaten them all my life so tasty. I think the recipe we use in New Zealand is slightly different but this turned out awesome none the less.

I made according to recipe but used sour dough starter instead of cream and used dates instead of sultanas. Beautiful scones and made exactly eight just like the recipe said. The reason I said this is because these things don’t usually work out for me. They are just so Yum 😋 Thank you Beth. (I am called Beth short for Elizabeth)

Hi Beth, I absolutely love all of your videos. My grandmother LOVES scones but she's diabetic. Even though you don't use a lot of sugar in the dough I was wondering what can I use as a sub for the sugar?

Hi Giamarco! Ha yes I'm sure this wouldn't be a very common thing to serve in Italy (you have so many other wonderful pastries there!) But hey it could be a fun thing to surprise your guests with ha! :) I know I love those full party menus too! I want to be able to afford to bring them back here on my channel. They were part of a Kin Community series we did on Kin as part of a funded channel program, where YT gave us funding to produce them. Sadly they are expensive to produce, since they take a full day to shoot and a full week to edit. But worth it in my opinion. I think they are so great and helpful for people.I hear YT is bringing crowd source funding to channels soon, where creators will be able to raise money for certain projects and I'm thinking maybe we try that to see if we can raise enough money to bring them back? Maybe 6-7 of them a year for all the major holidays? Keep you posted on that! :) Hope all is well in beautiful Italia! :)

Ive made the chocolate ice cream recipe and it is the best ive ever taste! I just have to say that Im on puerto rico and here the heat is so high that on 30 minutes my ice cream wasnt ready so y put it on the freezer and it get finished. The only thing that happened to me is that I didnt found bittersweet chocolate on stores so I used Semi-Sweet and added cocoa powder for the flavor and it was perfect. Love you beth and thank you for this I had a great family moment :)

Hi Beth, My favorite scone has white chocolate and pecans with a hint of cinnamon. I used to get them at a bakery that has since closed. I miss them!!! I'm going to try to recreate the recipe with your base. Thanks. Btw, where did you get that super cute honey container?

I know this is an old video, BUT let me tell you I have found the perfect scone recipe! They are so good and way better than cafe scones. Butter, cream, eggs... so decadent 👌💜💚💜

Hi Beth. For the cranberry orange scones, would it be okay to brush with an egg wash too and to sprinkle with brown sugar instead? I'm not using turbinado sugar that much so I was just wondering. Thanks and I LOVE your channel!

Oh Entertaining With Beth ! All these teas and scones are making me emotional ! Ahah ! And you did, without knowing, my favorite snack after school when I was little ! Fresh chocolate scones (with butterscotch sauce, I'm guilty..) and peppermint tea, so refreshing yes ! Loved this recipe !
