Shrimp and broccoli in garlic sauce is a classic Cantonese dish. It is super healthy, delicious and It takes about 15 minutes to make.
To marinate the shrimp
14 oz 400 grams of Shrimp
1/4 tsp of salt
1 tsp of paprika (Amazon Link - geni.us/k19xa)
1/3 tsp of black pepper
2 tsp of vegetable oil
To make the sauce:
1/2 cup of water
1/2 tsp of sugar
1 tbsp of oyster sauce (Amazon Link - geni.us/nmsF8)
1 tbsp of soy sauce (Amazon Link - geni.us/XhhnS)
1/2 tbsp of hoisin sauce (Amazon Link - geni.us/qTdtVX)
1 tsp of dark soy sauce
2 tsp of cornstarch
Others
2-3 tbsp of vegetable oil to stir fry
12 oz 340 grams of broccoli
8 cloves of garlic, diced
1/2 tbsp of ginger
A few red dried chilies (Amazon Link - geni.us/Ksb7RQ)
2 tbsp of water
Instructions
Use paper towels to dry the shrimp then season it with 1/4 tsp of salt, 1 tsp of paprika, 1/3 tsp of black pepper, and a drizzle of vegetable oil. Mix well and set it aside.
Cut the broccoli into florets. Some people will throw out the stems. Let me share a wonderful way to use the stems. Peel the skin and cut them into quarters. Pickle them just like how you will pickle cucumbers. You will be surprised by how good they taste.
Dice 8 cloves of garlic and 1/2 tbsp of ginger. Optionally, cut open a few dried red chilies to spice up the dish, you can also use chili flake if you want.
Before we turn on the heat, let’s put the sauce together: 1.5 tsp of cornstarch, 1 tbsp of soy sauce, 1 tbsp of oyster sauce, 1/2 tbsp of hoisin sauce, 1/2 tsp of sugar, 1 tsp of dark soy sauce, and 1/2 cup of water. Mix well.
Turn the heat to high and heat your wok until it is smoking hot. Drizzle in a few tbsp of oil and swirl it around to cover the bottom. Toss in the shrimp. The wok is super hot. You only need to stir the shrimp for a couple of minutes and they should turn nice and pink. They are not completely cooked through yet. The inside is still a bit translucent. That is the point you want to take them out. Don’t worry, we will cook them further later.
Make sure you tilt the wok to leave the oil behind. We will use that to stir fry the vegetables. Turn the heat back on medium and throw in the garlic, ginger, the optional red dried chilies, and the broccoli. Toss for a minute or 2. Add a splash of water from the side of the wok. Quickly put on the lid to trap the steam so it cooks the vegetables through. This way, the broccoli is stir-fried then semi-steamed, which tastes so much better than just blanched broccoli.
Pour in the sauce. Introduce the shrimp back into the wok. Toss for a couple of minutes or until the sauce is thickened. And you are done.

Thank you for watching. Just a little bit info about my condition. I have been trying different arthritis medications over the last 2 years and hope to find one that works for me. During this trying period, I have to take Prednisone to help with the symptom. It messed up my appetizer. I feel hungry all the time and I eat 3 times as much compare to before. I had to cook lots of vegetables and low-fat meat just to fill up my stomach and prevent me from eating rice and noodles. Because I am Asain, and I am constantly wanting to eat rice and noodles. Especially I am testing and cooking all the time. So it is very difficult. Well, below are some of the recipes that worked for me, you can check them out if you want. I too have a condition. I am what doctors call a "fatso." I am now on a strict Atkins diet, since that has always worked for me, and it's the only thing that can break me from my carbohydrate addiction. I am going to try this recipe, but I will use a sugar substitute instead of the sugar. It looks great.

I've really enjoyed trying out Mandy's different recipes, especially this one! One of the things I've noted she really has done her homework putting these recipes together, as far as the amount of ingredients that will fit perfectly in the wok without over crowding it, and most importantly the flavor profiles. I'm learning! The only thing I did differently on this recipe was to add about a 1/2 tbsp sesame oil and tossed it in right before adding the sauce. I like VERY spicy food so I doubled the amount of chili's, split and de-seeded them, and soaked them in the water (warm) the recipe calls for and then added it. It turned out delicious - and HOT! If the top of my head doesn't sweat it's not spicy enough for me!

Love your channel and I have become quite proficient in wok cooking since my wife purchased your wok through the Amazon link last Christmas. This will be another recipe that will be a favorite. As for the arthritis, many of us deal with it every day and sometimes the pain is worse some days than others. Be thankful it could be worse. I'm 65 and had prostate cancer 21 years ago, a kidney removed due to a tumor 8 yrs ago, and 4 bypass open heart surgery 6 yrs ago. I would not trade my experiences with these issues. I saw the hand of the Lord our Creator within these events and the strength gained overcomes the daily struggles. Arthritis is a pain for sure but it reminds me, there are those who have much greater ills that they struggle daily with. Thank you for sharing your talents and yourself. I tell everyone I talk to about cooking topics about you and your cooking channel. Keep that beautiful smile, it lifts my spirit every time I tune in. Big Shweet

Thank you so much for your recipes! (I especially liked the way the broccoli is steamed in the wok, rather than blanching them first, which is more nutritious, and one less pot to wash.)
