Grandma's Chili -
- 16 cups chopped cored peeled tomatoes
- 6 onions
- 6 green bell peppers
- 2 red bell peppers
- 2 cups white vinegar
- 1 cup brown sugar
- 1 clove of garlic
- 1 tbsp celery salt
- 1 tbsp mustard seeds
- 1 tbsp salt
- 1 tsp ground allspice
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1/4 tsp ground cloves

This looks good. Save the skins and dehydrate them. Makes great tomato powder that can be turned into sauce or paste. It is shelf stable for years.

I dehydrate the tomato skins as well. When dry, I use a coffee grinder to grind into powder..

Good idea Marie Prater. I am 63 years old and have never heard of dehydrating anything. You homesteaders have certainly shown me a thing or two. Guess one is never to old to learn.

The next time you have a large amount of tomatoes to process, get your camping ice chest out scrub it out real good make sure the plugs in and then as you dip your tomatoes in your boiling water and ice bath fill your cooler that way you have all your counter space to work on. Hope this helps

Do not use a cooler as the side are not made with plastic grade for food!

Y'all, I know your show is a teaching type program and a good one, but I bet I'm not the only older person who's done this stuff all their life, that watches your video just for the enjoyment of shared common life styles. I watch y'all up to your elbows in tomatoes and remember hot summer days and a wash tub full of tomatoes; me, mama, my mother in law, my sister, squirreling things away so we could eat good all winter. That looks like a wonderful recipe and one that I will try as my tomatoes continue to come in. I made Jenn's recipe for cornmeal pancakes last night for supper to go with some homemade (from homegrown tomatoes) minestrone soup--my husband and I loved those pancakes (not just for breakfast--put some pats of butter on them and yum). We enjoyed our little visit to the Stivers Homestead yesterday. I read through my new cookbook on the ride back home to Lexington. It was fun to get to meet Jenn and Raylynn (not sure I'm spelling her name right) and to get to have a nice long conversation with Carol. We look forward to coming back for another visit in the fall, and hope we will get to meet Zach and Wyatt on that trip. Thanks for all you do for your viewers. As I told Jenn, since I retired my backyard garden has become the focus of most of my time and attention, and it keeps expanding every year. My husband does the bed-building and fencing, and I do the planting, watering and harvesting. We both enjoy the eating! Love you guys. (Sorry about the loss of your big old walnut tree.)

I love chili sauce. I do mine in my giant turkey roasting pan in the oven. I find that way, I'm not worried I scorch the bottom of my big stock pot. That's a good day's canning right there.

Just got back from the store. Picked up some cornbread and some cans of chili. I've actually started a separate section of my pantry for canned goods. It's called "the cantry." That can of chili is the first can to go there.

Awesome guys! Before life threw us some curve balls, I put in my first vegetable garden, and I grew Amish Paste and Roma tomatoes. One day I got it in my head to make some home made spaghetti sauce from scratch (from my mom's recipe)... meaning raw tomatoes instead of store bought tomato juice. I picked, juiced, and cooked the sauce all in the same day. Vine to plate in about 6 hours. And ya'll... I never had such incredibly flavorful home made sauce! It is truly incredible the difference using your own home grown veggies makes!! I can't wait to get the garden going again and start some canning. Thanks for sharing! 🤠

Thanks for the recipe. Sounds delicious. I’ve canned ALOT of tomatoes during my life and I’ve found that there isn’t a need for the ice bath. I just run cold water over them and slip the skins that way. Tomatoes are my favorite thing to can. Then beets. ❤️

You can dehydrate or freeze dry the skins and make tomato powder.

Ive seen that the Kitchenaid chopping attachment is awesome. 1870’s Homestead demonstrated theirs. A great extra hand in the kitchen. I found last year I chopped so many peppers and onions, it took me way too long to hand chops so I took the plunge and got a refurbished one from eBay. You guys have grown so much. You must be so proud.

Just fyi, you can freeze dry the skins and grind them into a powder for tomato powder, add water to the consistency you want and you have sauce or paste or just add the flavor to a dish to thicken it.hugs and love from Texas!

Procedure note. Use the immersion blender just in the beginning. If you use it to in the end process, it can add air to your sauce and create more head space than you want later.

Look at those amazing tomatoes!!!! I’m kind of envious I didn’t start a garden this year, but I couldn’t with my health.💔 And it would be a sad a garden anyway with the late spring and unusually cold summer we’ve had. I’d love to have temps in the 80 for a couple of months , with rain at night , a wonderful garden and a little pool to cool down in. That would have been paradise on earth to me!!

Just a suggestion.. I’ve been putting my tomato’s on my gas grill to take the skins off. Just slap them on rotate a few times the skins slid right off. Keeps the heat out of the house but also makes a nice flavor to them takes less time and less ice. I just pull them off grill put them into a pot w a lid then skin them, and u have super delicious juice in the bottom to add to the tomato juice. Speaking of I never waist that by boiling them down I just strain the most juice I can hold it for juice canning Then it takes no time to have thick sauce. My goal is to keep most of the heat out.

Ok so this looks amazing… and I want to taste it sooo bad but due to covid messing up my year I haven’t even gotten 1 tomato from my garden this year! So even if I do end up getting any tomatoes this year I doubt I’ll be able to try it 😔 maybe I can find someone in my area to buy some from…

I quarter my tomatoes and throw them in the oven or crockpot and roast em. Pull em out and let them cool off and the skins come right off. Its a good way to do it when you dont have time to be in the kitchen all day. Enjoying your videos!

I have a Blentec high speed blender and how long I'm blending you can always tast some of the tiny particles of tomato skin so I always reskin them, it is worth the effort

Do you dehydrate your tomato skins? You can dehydrate them along with complementary herbs like basil or garlic or oregano, and then powder. You can add that powder to all kinds of things to add really good flavor. It can also make a great quick soup.

Sounds like you were making pumpkin pie with the spices! 🤗 Sad for me, I can’t eat tomatoes. Too much acid and it causes inflammation to my system. I love spaghetti sauce, I could cry.

I do a large 300lbs of stewed tomatoes. Add the green pepper onion and celery ? I use them for everything. Stews ,chilis marinara. Then I cook them add meat or we love stuffed cabbage I use as tomato sauce. I save a lot of jars. And I always find new thing to use them for.

If you use a 2c measuring cup you can fill your jars a lot quicker. That way the jars don't cool down. Blessings!!

For canning I bought dish tubs from Walmart and they make great large bowls ….then they stack inside each other and fit in storage ….they cost me $3 each….I invested in a gas two burner outdoor cook top which is great for water bath canning……my husband made a sturdy wooden table I keep next to it and I put a bath towel on it to put jars on after canning……..it’s next to my back door and is mostly shaded….keeps the heat out of the kitchen. I also save large pretzel jars that help when needing to store cut veggies until ready to can….an old fridge in the barn used just during canning season helps with the overload of produce needing to keep cold. Having storage boxes with snap lids makes it easier to store items on top of each other in the fridge.
