Beyond Frugal: Leek and Potato Soup - Shop bought vs. homemade.

Another shop bought vs homemade price challenge. Today I am making a gorgeous, thick, creamy leek and potato soup (with added extras at the end if you want) to see if I can make it for less than the price of a tin of ready-made stuff at the shops. I am making it with all shop bought ingredients so even if you don't have a garden I aim to show that it's possible to live on much less.

Leeks have a higher value of quercitin than other alliums. It is anti-cancer and antioxidant. If you throw in the skins just to make the stock, the quercitin value rises a lot more.

They are best before dates on your stock powder Vivi I don’t worry about them but I would transfer it to a glass jar with a screw top to keep moisture out and keep it in the cupboard in the dark. When I was a kid(I’m 59) virtually nothing had best before dates on. Heather

I'm reminded that not everyone has the equipment to make a smooth soup however the soup is wonderful without whizzing it up. It's a very old old recipe going back before the equipment was available.

Delicious!! I use to break down the costs of my meals about two years ago in my videos to show people how cheaply you could eat if you cook at home. I would get my groceries for the month and only have $25 to spend. It was very possible for me until about a year and a half ago when inflation really took off. I now have to go to a food pantry which has been lovely. I do garden but not to the extent that you do due to our scorching weather and space but that might change this spring or even next. I completely agree that if you grow your own produce that it's just your blood, sweat and tears invested in it. It's so much better to grow your own because you know then that there's no pesticides, so much healthier. You did an excellent job in explaining the various comparisons and I think you'll open people's eyes to it that are struggling. Bravo Vivi!! I love seeing these videos. Now on a different subject. I've watched your last 8 videos, which were lovely as usual but haven't commented on. 😞 I usually watch videos after breakfast before I take off running for the day or at bedtime. The problem when I watch something at bedtime is I think I'll comment in the morning but I end up forgetting....😮. So sorry about that but I've been here in the background watching and I'm going to watch yours in the morning from now on. Keep up the excellent work Vivi, you're helping so many others that are struggling and those that just want to save up for something. 😁💗👍

I know I've told you this before, but it bears repeating: I started watching your channel for your allotment videos but your beyond frugal videos, and especially anything in the kitchen, is what I watch when I'm feeling low for not being able to "afford an easy life". Love this one! What I find interesting: are leeks always sold with most of the green part trimmed in the UK? In Germany, we usually get the whole leek (or most of it) and then it's up to us what we use. (I, of course, use it all 😉)

Hi Vivi, the soup looks amazing. I love a good soup. I dont have a mixer or a blender, but I do use a potato masher, dont know if that is the right term. Today we are having a bit of a splurge.. I found deer meat at my local shop, on offer, it had been frozen. So a rare treat for todays dinner. Served with homemade potatoes au gratin, and fried mushrooms and vegetables. (I know you are vegetarian, but for me its a rare treat these days, cant remember last time I had beef or a roast) 🙂 Oh, you are so right. My brother is a farmer, and my sister in law called me the other day, if you drive by, i am not at home, but please help yourself to some eggs, the chickens has started laying again, and she has too many. I picked up 24 eggs absolutely free, and had a lot of laughs with my brother. We had farm fresh eggs this morning. Happy Sunday, I am indoors cleaning, as it is another snowy day here.

I like to add thyme to my soup, which I have in the garden. For those who are a bit concerned regarding protein add some cannellini beans. Not only will they add protein but when blitzed will make it even creamier. You could use dried ones which will keep the cost down, but don’t forget to soak them overnight.

I just chop up potato and leeks, heat some oil or butter in non stick pan, fry only slightly (without almost any browning, just to get them going), add about a glass milk/water mix, salt and pepper, cook on low heat, under lid about 5 min. Turn off the heat and let sit for about another 5-10 min. Ready. Garnish with parsley or tender leek greens, if on hand. As main or side dish. I always add black pepper to everything! Even more now it is said to enhance absorption of so many nutrients.

My local market fruit and veg stalls (and presumably veg stalls elsewhere) often sell stuff very cheaply that's close to the end of its life. You have to buy in fairly large amounts, but that's perfect if you're batch cooking. Worth keeping an eye on what they've got.
