Bhindi Do Pyaza is a popular Indian dish featuring okra (bhindi) cooked with a generous amount of onions (do pyaza means "double onions") and spices. Here is a simple recipe to prepare it:
Ingredients:
- 250 grams of bhindi (okra), cut into 1-inch pieces
- 2 large onions, thinly sliced
- 1 medium tomato, chopped
- 2 green chilies, slit
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- 1 teaspoon dried mango powder (amchur)
- Salt to taste
- 2 tablespoons oil
- Fresh coriander leaves, chopped (for garnish)
Instructions:
1. Preparation: Wash and dry the bhindi thoroughly before cutting. This prevents it from becoming slimy during cooking.
2. Cooking Bhindi:
- Heat 1 tablespoon of oil in a pan.
- Add the cut bhindi and sauté on medium heat until they are lightly browned and cooked through. Remove and set aside.
3. Cooking Onions:
- In the same pan, add another tablespoon of oil.
- Add cumin seeds and mustard seeds. Let them splutter.
- Add the sliced onions and green chilies. Sauté until the onions are golden brown.
4. Adding Spices:
- Add turmeric powder, red chili powder, and coriander powder to the onions. Mix well.
5. Tomatoes and Bhindi:
- Add the chopped tomato and cook until it softens.
- Add the sautéed bhindi to the pan and mix everything gently.
6. Finishing Touches:
- Add garam masala and dried mango powder (amchur).
- Adjust salt to taste and mix well. Cook for another 2-3 minutes to allow the flavors to meld together.
7. Garnish:
- Garnish with chopped fresh coriander leaves before serving.
Serving:
- Serve hot with chapati, paratha, or rice.
