Here's a simple recipe for tomato soup:
Ingredients:
- 1 tablespoon mustard oil or any vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 1 can (28 ounces) diced tomatoes
- Salt and pepper to taste
- Optional: cream or coconut milk for added creaminess
Instructions:
1. Heat mustard oil in a large pot over medium heat. Add chopped onion ,minced ginger and minced garlic, sauté until softened, about 5 minutes.
2. Add diced tomatoes (with juices) to the pot. Bring to a simmer and let it cook for 15-20 minutes.
3. Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
4. Season with salt and pepper to taste. If desired, stir in cream or coconut milk for added creaminess.
5. Serve hot, garnished with fresh basil or a dollop of cream if desired. Enjoy your homemade tomato soup!
