A Taste of the Azores with Angela Castro

Pork Bifanas
2 lbs pork loin cut into ¼ thickness
½ cup pepper (malagueta)
8 cloves garlic finely chopped
¾ cup burgundy wine(Carlo Rossi table wine)
2 tsp kosher salt
¼ cup olive oil or canola oil
Pound pork loin with meat tenderizer. In a ziploc bag place ingredients except oil. Let marinade a few hours or over night. Heat up cast iron skillet nice and hot over medium-high heat. Remove the pork loin from the marinade and place on the hot skillet, sear meat for one minute on each side. Place on a separate plate and finish searing all the meat. Wipe skillet and add oil. When oil is hot cook all pork loin until golden. Pour the meat marinade in the skillet and let boil for about four minutes. If too salty to taste, add water and more wine. Serve with mashed potatoes or steamed rice. BON APPETIT.

This is exactly how my mom makes it also. They’re from Sao Miguel, so happy I found your video as my friend wants to learn how to cook Portuguese dishes.

I use your method as well. It’s called “estralando” a carne. It definitely makes a world of a difference in flavour

I would like to know from which village in azores were you born at. My mom is from Porto Formoso and my dad is from Lombard de Santa Barbara. Greetings from Canada🇨🇦

I am from lomba de São Pedro but my grandmother and my aunt were from Porto formoso. They had a store and he was short of one leg. Thank you for watching my videos.

What was malagetta? I understood the rest of the marinade but not that?

Malagueta is a crushed pepper sauce. Portuguese make this pepper and I put in every thing.

Also called pimenta moída, or pimenta da terra or pimenta açoreana. It’s basically crushed (rough purée or consistency to preference) red peppers and the peppers type used is usually the red shepherd pepper. The level of pepper heat is your personal preference. My mom likes the pepper with heat. I prefer medium heat or mild.

In our region of São Miguel, Malagueta is more like piri piri or also know as hot pepper sauce. We call this pepper sauce pimenta moída.

@@angelacastro-theolivebranch not all Portuguese make this pepper sauce or use this pepper sauce. It’s predominantly used in the Açores.

Angela, just a tip: i bought at amazon cast iron frying pan silicon covers, makes lifting the heavy pan much easier and safer☺
