I have always admired Bryan's way of playing, one of the very few that respects the original playing tempo of the tunes, never as fast as you often hear from current pianists. He respects the dynamics, something that other players don't do, they all play and they seem to me player pianos with rolls. Bravo Bryan!

Actually, both are accurate. Depending on the year, Jelly called it both (per a historian at a music festival)

Sometimes it's called "Big FAT Ham," sometimes "Big FOOT Ham," and sometimes just "Ham and Eggs." Jelly Roll Morton had a habit of re-working titles and there are often variants.
