Ingredients
4 thick slices of your favorite bread, torn and lightly toasted
1 small yellow onion, chopped
1 celery stalk, chopped
3 garlic cloves, peeled and crushed
5 tablespoons unsalted butter, divided
1 tablespoon poultry seasoning
1 tablespoon Adobo seasoning
1 tablespoon oregano
Pepper, to taste
1/4 cup chicken stock or broth
1/4 cup milk
boneless pork loin
Bacon, depending how wide your bacon is, 2-3 slices per pork chop
Instructions
Preheat your oven to 375°F (190°C). In a large skillet, melt 3 tablespoons of unsalted butter over medium heat. Add the chopped onion and celery. Sauté until they are soft and translucent, about 5-7 minutes. Add the crushed garlic and cook for another minute until fragrant. Stir in the poultry seasoning, adobo, oregano, and pepper to taste. Add the chicken stock and milk. Let it simmer for a few minutes until slightly thickened. Tear the bread into small pieces and add to the skillet, stirring to combine and let the bread absorb the liquid. Set aside to cool slightly.
Lay the pork loin on a cutting board and slice it into thick chops. Carefully cut a pocket into each pork chop without cutting all the way through. Stuff each pocket with the prepared stuffing mixture. Wrap each stuffed pork chop with 1 or 2 slices of bacon, depending on the size of your bacon and pork chops. Secure with toothpicks if necessary.
In the same skillet used for the stuffing, melt the remaining 2 tablespoons of butter over medium-high heat. Sear the bacon-wrapped pork chops for about 2-3 minutes on each side until the bacon is crispy.
Transfer the seared pork chops to the oven and bake for 25-30 minutes or until the internal temperature of the pork reaches 145°F (63°C). Let the pork chops rest for a few minutes before serving.
