Sydney Fish Market (goo.gl/maps/khNKtN7KUUGPv2xs5) - After meeting up with Chef Dan, we met up with Alex from the Sydney Fish market who showed us around and gave us a very interesting brief about the Sydney Fish market and the quality of seafood that auctioned.
Red Claw Seafoods (redclawseafoods.com.au/) - At the fish market we visited Red Claw Seafood who specialize in some of the best live seafood in all of Australia and where Chef Dan gets his supply. We were after their insanely huge Tasmanian king crab!
Mr. Wong (goo.gl/maps/mcoC3PUG2GCL9Vq48) - After getting our crab, we headed back to Chef Dan’s restaurant, Mr. Wong, for some dim sum, roast duck, and mostly importantly, the fresh giant Tasmanian King Crab! It was without a double one of the best crabs, both in natural product and preparation that I’ve ever had. It was so big, Chef Dan had to cook three different dishes with it.

I love the chef lol, none of the pretentious crap you usually get from great chefs and just straight up I wasn't smart enough for college so I became a chef cause I didn't suck at it! Good stuff.

Not only the King Crab is very rare but it was also cooked by Chef Hong that made it Ultra rare! What a privilege to have Chef Hong cook for you. I'm so jealous.

tbh I aint too impressed.. I didnt really like any of the preparations of the crab.. He goes too far.. All that ginger, and then all that pepper... lol.. No thanks.. Even the noodle dish he put sooo much oil in it...

@@JonHop1He didn't actually put that much ginger for that amount of crab, he put a bunch of julienned spring onions on top after the ginger. The ginger is also thinly sliced, not grated so they don't impart as much ginger flavour. The same rule with the pepper, whole spices don't impart as much flavour as the same amount in grounded form.

They're both awesome, but I prefer Sonny. Mark seems a bit lost or socially awkward at times. Not that I blame him, who wouldn't be in settings like that, with super exclusive food and people? Bless his heart. Its just harder to watch especially when its so relatable 😅 Like the times he's trying to hard to be a people pleaser, hard to explain... but like with the peppery crab in this video, I don't think he liked it as much as he said.🙈 He seemed nervous about saying anything at all as he went straight into overselling it as he was kinda trembling while handling it. But love to see all the amazing foods and cultures on both their channels.

He managed that 5kg crab as if he wasn't doing anything at all, so straightforward like one-two-three. And then puts a spectacular, jaw-dropping feast on the table, leaving you wondering how on earth did all that come about. I'm still a bit dazed. Wow!

I've seen a lot of seafood meals....I've seen a lot of Crab meals....this one tops them all. What a trio of fabulous dishes...the Noodles and head fixins top anything else I've seen!! Chef Dan is amazing and a nice man. Mark, as always....you are the best at what you do!

when I was a young bloke in the merchant navy the ship ran from Port kembla to Strahan TAS. We had an arrangement the the lobster fishos if they coaght any of these giant crabs to wave us down when we left Strahan and headed northd stop and we swapped beer for a couple of crabs (which incidently would cling to the lobster pots as the fihos were pulling them on board) I remember trying to get the crabs into the copper in the ships laundry to cook them. JAYSUS! It was 1967/68. The ship POOLTA was the last ship to leave or enter Strahan

Was in Mr Wong's yesterday as a traveller from Melbourne. Amazing place. The food is awesome. Service fantastic. But this vid doesnt do justice to just how beautiful the restaurant is, from outside, hidden in an alleyway to inside with jazz music and decor that just oozes taste and style. @@katrinawong8273 I'll definitely be going back for a La Carte. Did dim sum first time. Also added pippies in XO sauce with the crispy thin rice noodles. Never seen it done like this before and wow. Just sooo good! Soaked up all the sauce. Normally it is chinese donuts.. but this was far better!!

I can proudly say as an Australian who has traveled many places and had the pleasure of eating and experiencing some amazing cultures in my life. Although our meat & seafood produce is top tier unbeatable the cleanest the most vibrant in colour the freshest. Mark, this was such an insightful video, great content. I'm learning so much. I never would've thought prawns were so big in Australia, but it make sense why so many Australians come to New Orleans to the point of them having family reunions in New Orleans, because she share full loves for seafood.

I see a wonderful variety of seafood prepred with so mny different seasonings and surely spicey I would imagine. Such an effort by chef Hong and explain all the plated dishes how they re seasoned and cooked. Thank youso much for such an education on these seafoods and the market was fabulous.

@@AngelPerez-ln1uc I crab snare Dungeness crabs 🦀 up in the Bay Area California USA and I never eat the ‘butter’ it’s not just it’s fat it’s all it’s guts, all of the heavy metals, toxins and contaminants in the crab as well. As much as I love crab I clean them of the guts before cooking as I don’t need contaminants and toxins in my food. They measure the toxins in crabs here each season and some seasons it’s not even sage to eat. When you have a lot of crabs to cook you also it also makes room in the pot or stammer etc. But seriously the ‘butter’ is full of toxins

I LOVE CHEF DAN! He’s so cool, I watched an Australian food show with him as a judge, and he’s absolutely delightful. Great video, Mark! I’d give my left eye for that crab, I live in landlocked northern Canada, so crab here comes in a can.

@@damiann4734 Thank you for the correction on the chef's name. My mistake was that the name of the restaurant is "Mr. Wongs", (see the video footage at 0:47 seconds into the intro).

@@gregmonger5747 the restaurant is probably a play on sino-chinese literature. "Wong" can be the chinese counter part of "Hong", often from the southern regions of China. Since his restaurant is mostly southern chinese cuisine, the name is quite suitable and clever.

This chef is amazing, he's so human and just seems like a wonderful guy. I get so tired of the high and mighty chefs we keep seeing all the time and seeing this guy take it back to the basics and get in there and do the work. Good for him and on to more joy! I get TONS of blue crab, shrimp, and all the gulf seafood here in the US, and it's always a lot of work for the blue crab to get the meat out. I can't even imagine just getting a CLAW with that much where you have to take many bites to get through it. Unreal!

Mark Wiens I've been watching ur videos on & off in diff's countries, but Chef Dan Wong explaining every detail of how to cook that King Crab-3 ways & eating w/ you is a legend, such a genuine person..showing too other good dishes in his restaurant, roasted duck, mapo tofu, those signature dim sums, dumplings, siomai, etc. more power to his restaurant.
