At the start of my jiu-jitsu journey, I was like, "grabbing the head is ineffective, and when an untrained person does it, I can counter easily." Now, I'm like, "Grab the head, control the body."

your partner tends to skip the hand fighting and off-balancing phase before going into guard attacks, leading to easier defense and counters (really easy for someone of your skill level).

Great Roll narration, thank you Coach! How can I prevent my opponent from turning away when we're both on our backs and I have the chin strap during a guillotine pass? Often, despite having the chin strap, my opponents just roll out. Any tips?

I can't imagine that bridging on/with your head could be good for your neck long term. I just avoid inversion and all neck stuff. I've seldom seen moves like this work out for anyone on a long-term basis. Compression and disc degeneration happen regardless; adding bridging with your head can't possibly end well.
