One other thought. Blaand can taste absolutely delightful when you bottle and drink it as soon as it is made. Aging blaand a few months often results in a wine that you really cannot share with anyone as it no longer tastes "good", but after a year or more the blaand begins to taste like a fruit wine and becomes incredible once again. I also find that acidic whey (whey made with acids such as lemon juice) taste even better when the wine is still "green" (very young) than blaand made with cultures.

Watching while trying my own blaand :D If you are into more experiments with dairy and alcohol I highly recommend souring wort with yoghurt cultures to make amazing sour ales. Tried this a couple of times and these were the best sour beers I did ;)

Think i might try this, my yeast choices are yeast from a cider fermentation or a handful of raisins,,i use raisins to ferment shop bought apple juice into a rather nice cider, they take 3-4 days to start fermenting but theres less junk at the bottom of the carboy when i do it that way.

Yes never throw away your whey, its a very healthy probiotic that you can drink directly or feed your plants in the garden. In the garden it will help feed the natural micro organisms just like in your gut! Whey is awesome!

From what I have learned about this beverage most people seem to drink it young like a week. Using the yeast starter from the wine definitely will add a much more enjoyable end product than using a wine yeast from a packet. Especially if that wine was age in a barrel because of the tannins. I guess if you wanted something more beer like add toasted or malted oats. Boil it with about three sweet gale leaves and strain it. When it is done fermenting, add a little sugar to naturally carbonate your brew.

Made some shortbread butter cookies the other day using an all-purpose einkorn flour. To see how well the anise, mint and lime extract I made would taste in a simple cookie. Pretty amazing that's for sure. Flour made from this ancient grain taste much better than the usual bleach white flour you would by here in the states. From what I understand malted sinking add a mild vanilla flavor would brewed in beer.

Caro Cuoredicioccolato, 2 quick comments. 1. You used a wild yeast from the mango wine. It was a low alcohol producer. If you wanted it to be stronger you should have used a yeast from something that produced more alcohol.I remember seeing you make a wild yeast that had a much higher count. And 2. I understand meads take a long time to ferment. it stopped quickly....Buono Viaggio Nella Grecia :)

sorted. I'm sure my first failure was due to low temp, not pH. just drinking some. 9.8% took 11 days. unique taste I would say, subtle but tangy. will do again for sure. graze mille

I am allergic to alcohol but on a very rainy or snowy night my Arthritis flares up and a glasses of beer or wine brinGs down the pain so that I can go to bed!!! I just picked up some wine brewinG yeast and unpasteurized honey from our local farmer's market...so I can make thiS recipe next time that I have some whey leftover from makinG a homemade Farmer's cheese!!! Great video. I also like to use grape yeast, but there was another yeast you mentioned at 5:03, you said, "if you want to be more original you can cut it into pieces and smash it." Please let me know what ingredient you were referring to. It sounded like you said apricot, but I couldn't hear that part clearly so please let me know what the more traditional ingredient was that you were referring to. Thanks!

Whey contains lots of lactose which is not directly fermentable. Have you tried using lactase enzymes to first break down the natural lactose so you could ferment the whey directly instead of fermenting the sugar? If so, how did that come out? I read discussions of historical recipes, and they do not mention mixing honey into whey to obtain fermentable sugars, but instead, in the olden days, they seem to have let the whey ferment wild, or sour it (i.e., rely on lactofermentation). So the easiest strategy to recreate the original idea might be to use lactase (easy to find, as it is needed for lactose-intolerance).

@@Spectacular-cuoredicioccolato Sorry, I meant to use lactase to break down the sugars and then use yeast to ferment, but without adding sugar or honey. By the way, I really like your videos. It is nice to see that reasonable cheeses, wine, etc., can be made by simple processes and do not necessarily require complex equipment or chemicals.

Hi Andrea, can you clarify the whey amount? The only whey I know is powder so I’m confused with the amount being 1500ml. Is this 1500ml of water dissolved with X grams of powder whey? Thank you.

I am making mozzarella cheese next week so will give this a go . Off topic I am making your salami recipe this week as the pork intestines have finally arrived . Question is . I live in cyprus and the temperature is extremely hot this time of year but I have managed to get the outside fridge to stay at a constant 13° c .. is this temperature ideal for storing the salami in while it matures . Many thanks for the videos and content .

Bravo 👍🏼 yes you can try 1 week at 13*C and after you can check 😉 if the mold is white not problem but if you have different color you can store it in the fridge

I tried to make a cider with store bought %100 apple juice and yeast that I collect from apple scratch. I thought like" It's just apple juice what can happen" and I poured all of the yeasty juice. ( I used 3 apples to collect the yeast) Then fermentation is almost stopped so I bottled and carbonated them. They are carbonated well though. However, my cider has too strong yeast taste that u can barely feel the apple flavor. Did I add too much yeast? Maybe I should've used a teaspoon of that yeasty juice?

@@Spectacular-cuoredicioccolato of interesting so you use the 7.5 coefficient always, for any hydrometer reading? Well I think that Botulism is something to think about with blaand - it is a protein rich environment - ph is likely not very acidic, since milk and honey are usually at ph >4.6 - I'm not sure there is not a lot of oxigenation without vigorous shaking Do you think these are points to worry about?

@@giuseppeconti7428 Honey is a natural antiseptic. If the whey is pasturised, which it should be right after making cheese, there should be no problem. If there is a time period between making cheese and making the wine then the whey would need to be pasteurized again.

This wine has nothing to do with vikings, but it's very common among many of the former soviet republics like Azerbadjan etc. Fermented milk is a typichal drink among "nomadic" people in the east.

Great video but it leaves me with a couple of questions. When I make cheese and I use kefir to culture my milk the whey itself has a gravity of about 1.024 and that is because of the lactose in the milk . Yeast cannot ferment lactose unless you add lactaid enzyme (which I do)... but you didn't and yet your FG was 1.006, so that is surprising. How were you able to ferment the lactose? When I make cheese the whey is still alive (because I use cultures and not acids (lemon juice or vinegar) ) and the whey will continue to sour because of the presence of the bacteria. I generally boil the whey for a moment to kill the bacteria and allow the whey to cool to room temperature before adding the yeast. You made no mention of pasteurizing the whey to halt the souring and these bacteria eat the lactose but they produce lactic acid ... so I wonder if the low final gravity might be because of the presence of lactic acid rather than ethanol. Last point: I cannot speak about the vikings but the Scots used to make blaand from the leftovers from making butter and I suspect that they never added honey OR yeast but the wooden kegs they stored the whey in were very likely infected with yeasts that could ferment lactose (some Brett yeast can do this). I have been looking for a strain of Brett yeast that can ferment lactose but so far I have not been successful. But if I am correct then this wine would have been about 3- 3.5 % ABV - the equivalent of a "session beer" (that is to say, a beer you could drink all evening and not get drunk).

Next time try to use wine yeast or a grape or a apple and let us know if the gravity is different. Like you mentioned different yeast can work in different way 😬 I don’t know what kind of yeast was on the grapes or on the mango 😉

When you use kefir (in your case) the first fermentation (lactic) lactose becomes lactic acid. The source of sugars for his wine fermentation is honey. Also he used kombucha starter (a mix of yeast and bacteria)

@@Spectacular-cuoredicioccolato But the strain of yeast I add has no effect on the gravity of the whey when I add the yeast. The whey when I am ready to add sugar or honey itself has a density of about 1.024 because it is not water but is water WITH lactose and a little calcium and fat etc. When I add lactase tablets to break down the lactose I can get the whey to drop to a gravity of 1.000 or lower after fermentation. But if I don't add any enzymes no wine or bread or beer yeast can ferment lactose - which is why brewers sometimes add lactose to a beer (milk stout) to sweeten their beers)

The kefir (1/4 cup) is added to 1 gallon of milk for less than 4 hours during which I allow the milk to culture for 40 minutes; add rennet for 40 minutes; cook for 30 minutes; drain for 15 minutes and press for about 90 minutes (215 minutes). Very little lactose will have been converted to lactic acid in 4 hours. So by the end of the cheese making process I have whey which when I measure its density using an hydrometer has a gravity of 1.024. I boil the whey to kill the bacteria and yeast I added during cheese making so they are no longer alive eating the lactose but the lactose is still in the whey (24 points of milk sugar or about 8 oz of lactose per gallon) and lactose is not fermentable by wine yeast- which is why brewers sometimes add lactose to their beers (milk stouts?) to make them sweeter and to give them more viscous mouthfeel.

I've tried this 2 times but had to throw it out both times. It developed a heavy "nail-polish remover" smell. I think my lactic acid bacteria developed that together with my quite fatty whey. Next time I'm going to try leaving the whey covered in the fridge overnight to separate residual fat from the top and then add it to the fermenter with yeast. Maybe I'll boil it to get rid of the LAB I have in the whey but I do like the idea of getting some acidity from the lactic acid bacteria in the Blaand.

Did you have temperature controls? Did it ferment at temperatures warmer than 70F/21C? That might be the issue. Try fermenting at cooler temps.

@@ericv00 I just let it ride at room temp but I don't think it would've gone over 22c... I think my whey was too fatty and the bacteria started breaking down the fat in some way because it had a very thick fatty foam on top i didn't see in this video. Maybe it's my cheesemaking that is bad!😂

@@slipedits1360 Make sure you get a good disinfectant like Star-San and sanitize EVERYTHING so you don't get any bad bacteria or mold in there. Also never drink anything that grows mold. Throw it out. Other than that you'll probably be fine! Oh, and if you want to be on the safe side use commercial wine yeast in the beginning. Not as exciting but much less risky. A captured culture always has the risk of including bad bacteria.

cuoredicioccolato , not a ton of information. I know a bit about the Norsemen but had never heard about this. That made me suspicious. I have tried to research online but there is not much information. A claim that is repeated over and over is that blaand was brought to Scotland (which seems to be its modern home) by vikings. But I found no source for this claim. Some other pretty serious looking text called it the national drink of Iceland. But I found no other source for that claim. I did find articles about Icelandic dairy companies experimenting with fermenting whey to alcohol but none mentioned that it was traditional, which is rather suspicious.
