Stephanie, your video is one of the only ones on KZfaq that uses the traditional method of soaking the cherries and cake with kiersch, so kudos to you! Uuuuh... I'm sooo hungry right now :D Love to see you baking this. Traditionally, we bake this cake with a "Biskuit", I think, it's "sponge cake"?! Without any butter or vanilla, just wheat, wheat powder, cocoa, sugar, salt and separated eggs. I prefer using less wheat and adding some almonds, but that's some kind of a risk because the almonds contain so much oil. This way, the Biskuit will get veeery high. We leave it for the night and cut it the next day into three, better four layers. Each layer gets a little bit of Kirsch, just like the whipped cream and the cherrys which are thickend with some wheat powder. I'm putting it on the first layer using a cake ring. This way, you'll get an extra taste of cherry :) As you already said: guys, try sour cherrys, they are absolutely delicious. Love your way cutting chocolate, looks sooo good!! Thanks! Making this cake is, like marriage, not to be entered into lightly. I've just finished my third attempt and, finally, Mark III resembles Ms.Jaworski's: risen high, bounces back at the touch and smells so good even my tired old dog, Lacey, is sniffing the kitchen air with every indication of approval. I took the trouble to look for those moureno cherries in syrup on the 'Net and recklessly bought a jar of them from a source in Florida for $160.00!! If my dear wife were still alive she'd shoot me for such extravagance. But as I said to Lacey "What the heck, one doesn't live all that often." Also bought a bottle of kirsch to pour over. So, I have the cake, I have some kirsch ... all it needs for pure contentment is some charming lady with whom to share the joy of my baking. (Please! Don't all jump at once: I'm hitting 90 (age not speed))!

I made this today and it has turned out the best cake ever, just like you would eat in a restaurant. The only thing I did differently is make two sponges as one would have been to thin due to my baking tin being slightly bigger i.e.11 inches. Thank you so much for your clear instructions.

Yes, you could use all purpose flour for the cake flour. You could use wine or simply leave the alcohol out altogether.

You can make the entire cake and refrigerate it overnight. Actually I prefer to doing as it gives time for the flavors to mingle.

If you don't have a cake dome, then I would insert toothpicks or wooden skewers around the top and sides of the cake and then cover with a piece of plastic wrap. The toothpicks will keep the plastic wrap from sticking to the cake.

Made this cake ystrday and finally we all just had it for hubby’s bday. It was too good, we loved it. Soft n moist. I asked hubby to rate it on 10, he said 15 😅 thanks a lot fr the recipe. Only difference I made was, instead of using a 9inch pan, I used two 8 inch aluminum pans (split batter equally into them) and baked for exactly 15 mins. Came out perfect Also, apart from brushing cherry syrup and adding cream and cherries to the bottom layer, I also sprinkled some shaved chocolate in between.
