In this video, I review the PKS Buffalo Skinner, a classic butcher style knife from Dave Canterbury’s Pathfinder Knife Shop. This knife reminds me of a childhood memory, so I wanted to give it a try and see how it performs. The knife costs between $100 and $200, and it is made of 1095 tool steel, which is a high carbon steel that is very durable and easy to maintain. The knife has a hardwood handle that fits perfectly in my hand, with no defects or gaps. The knife came very sharp out of the box, and it has kept its edge through all the cutting tasks I have done with it. I have used the knife for various purposes, such as processing meat, peeling vegetables, and other kitchen chores. I have also used it as a woodcraft knife, and it has carved wood with ease to make bushcraft projects. I am very impressed with this knife, and I am happy that I bought it for my collection.
