This time we visited Ajisen Yaba in Nagoya.
It is an authentic Chinese restaurant that originated from Taiwanese ramen, and is one of the most popular restaurants in Yaba with a line out the door every day.
The cooking is relatively slow during the day, but at night, orders continue to come in. The sight of the chefs serving them one after another in spectacular fashion was almost a sporting spectacle.
The handmade chimaki, Taiwanese ramen (quite spicy), and vinegared kikurage mushrooms are all delicious and authentic tasting, and I would like to go back to this restaurant when I visit Nagoya.
