TBH, if we're talking about GTA games so far, I think GTA V gives out more "exclusive" feature, like each character special ability, weapon modification (I might be wrong, so do correct me), submarine vehicle, an actual seamless character switch (which TBH, just now games kinda using these feature), and probably an actual animal that actually able to attack you (this, I'm not sure other GTA before have done it)

Missing for GTA VC: - Only main series game with the pizza boy mission (surprisingly a lot of GTA KZfaqrs forget this). There is even a bonus 50 max HP if you complete up to a certain level. - Only game with the good citizen bonus (where if you see a cop chasing a thug, and you knock down the thug you will get a small amount of money).
