Cook a weeknight dinner and Clean with The Blind Mom Next Door! Join me as I prepare a quick and easy 15 Minute Sheet Pan Teriyaki Chicken and Pineapple weeknight dinner! I'm NOT a huge fan of cooking weeknight meals, but I've been trying to ind new and easy recipes to make for my busy family of four. As a blind mom, I share with you some of the ways that I prepare food, cook, and clean, and show how similar the methods and techniques I use are to those any sighted person would use.
Welcome to our channel! I am a blind mom to two girls and wife to my high school sweetheart, who loves to share inspiration, joy, creativity, and the reality of growth through the struggle, and through supporting one another. As a blind mama, and with one daughter who has Autism, I share lifestyle, craft/DIY, mom-life, disability-awareness, disability-etiquette, and guide dog/service dog related content, videos, and vlogs.
My family and I are in the process of transitioning this channel to a family channel, and the. name will be changing at some point in the near future. Thank you for your patience as we make these changes and make some important decisions about our channel and content.
We will be sharing about our journey with Evie's autism, life as parents with two kiddos, disability and differences and how they do (and don't) impact us and our family, and the same Crafty Blind Chick content which will be categorized when specific CBC videos are posted.. One of our favorite go-to recipes is taco salad. Layer browned ground meat (seasoned any way you wish - we usually use chopped garlic, diced onions, salt & pepper; but we have also used taco seasoning), shredded or chopped lettuce, chopped tomatoes, crushed nacho cheese Doritos, chopped avocado, shredded cheese, and drained Ranch Style beans, not necessarily in that order. You can even prep ahead by browning ground meat & then freezing it. Then, just pull it out and thaw when you want to make the salad. It comes together in 30 minutes or less. Our family always adds salsa to taste.

Ummmm, YES please!! I need to do that. Everyone in our fam will eat and love that except for Evie. That’s ok. Evie is an exception with a lot of recipes, even pizza, unfortunately. 😂

Seriously!!!!! That’s so awesome! It’s not my recipe, but we loved it too!! I went too spicy, but in my defense I had never worked with Asian chili garlic sauce and I suspect I should have erred on the lower side. 😂😂😂

hi Nicole. This sounds so good! Your videos are so polished and well put together I love it. I can’t stand the feel of chicken breast either! I’m not a fan of cutting them but I have found if you cut them while they’re still just a tiny bit frozen it makes it much easier. I like to go to bed with a clean kitchen as well but lately I don’t accomplish that. I bet they smelled so good while it was cooking.

Hey nickel! What a great video! Have you ever tried to make teriyaki sauce from scratch? Is super delicious. And it keeps for a while in the fridge too. I also like the crock pot for certain dishes. Or just make pork chops when we're pressed for time. LOL I also like to clean while I cook! It's so much easier and feels better after dinner.

I have not!! I’m just not a huge fan of cooking day to day meals. I LOVE cooking big celebration meals for holidays and such!

New friend here❤️😍❤️😍❤️😍❤️😍. I’m a legally blind artist.....but not totally blind since my 40s from an extremely rare hereditary retinal disease. I need large print but not Braille. My hubby does the cooking since I don’t really enjoy it but do LOVE to eat! Your dish you cooked looks delicious! Since you love artsy crafts and stuff you might like my channel………… I’m glad I found your channel ! Looking forward to watching mire of your videos!

Warm the honey in the microwave or simmer the bottle in a small pan of water.

OMGOSH..... WHY didn’t I think of that?! It won’t impact the integrity of the honey, right, or cause problems when it cools? It was such a pain in the butt!! 😂😂😂

Advice from a former honey & beekeeping industry spokesperson: Be careful about heating honey. Heating it in the microwave can actually destroy some of the natural enzymes. That won't affect the flavor, but can slightly affect health benefits. Also, don't heat directly on the stove. Bring a pan of water to boiling, remove from heat, then set the jar or bottle in the water. Also, in the case of a plastic bottle, heating it in the microwave or directly on the stove will cause the bottle to soften and become misshapen. In such a case your honey bear may no longer stand on its own (don't ask me how I know that, ha ha ha). A couple other honey tips: When measuring for cooking, if you lightly grease the measuring spoon or cup, the honey will slide right out. In the case of your recipe, you could just use the same spoon with which you measured the olive oil. Boom, it's already greased for you. :D Lastly, honey has an indefinite shelf life. So even if it turns to sugar, it's still good. You can either use it like that, as a sort of "spreadable" honey, or you can reliquify it by the hot water method above. (You can also put it on your car dash or set it outside in full sun on a warm day.)

I totally understand this! There are a lot of techniques and tools to use to keep yourself safe, and I’ll admit I’m scared of burning myself also. I’m more scared of cutting myself because I have a clotting disorder and am on lifelong blood thinners, so I’m suuuuper cautious when cutting food. It’s very empowering to learn alternative techniques of blindness for cooking and other activities so that you can feel confident and find out what you do and don’t enjoy!
