Great craftsmanship man! I've looked at a lot of different companies and designs but your smokers just seem to stand out. Really solid and I like those pressure clamp latches. Could you cold smoke in one of these as well? I'm imagining you could but not sure. I wanted something that is sort of an all in one use unit. Hot smoke and cold smoke. I'm looking for something that is sturdy and reliable that I could hot smoke or cold smoke 2 to 4 lambs in one batch. I mean like your average 30 to 50 lb lamb. Going to raise a starter flock soon after I get fencing up along with meat geese. Do you think the dimensions are big enough to do that? If not would you be able to tell me what dimension smoker I'd need to order from you? I was thinking I'd need a 24" deep by 48 " length in order to fit a whole split lamb per rack possibly a little more space between racks. It's hard to tell from the video because depth perception could be skewed unless I saw it in person. I do like this exact design though. I'm going to build a small sugar shack with a little bit larger than hobby evaporator. I figured it would be cool if I could have a unit like this on the opposite side of the shack and make it like an outdoor kitchen and sugar shack all in one. Going to get a separate pan for the evaporator that serves as a 60 quart water bath canner with lid and get an antique cook stove top fitted to it as well for off season cooking. I got lots of maple, oak, apple and alder wood to use. I'm stoked. Anyway any insight would be helpful. Thanks
