Molly, ya gotta crush yer garlic AT LEAST 20 minutes before you use it, that gets the allicin goin, y'know, it's like a 2-part epoxy or glue, when you crush the garlic it releases a compound called allicin, that's what's really good for you in garlic. I believe.

In actuality, you do not want to crush or cut your garlic in advance like that. Those compounds which make up the complex flavours of garlic start to degrade quite rapidly and you will have a much weaker flavour without complexity. Always prep garlic directly before use.

Ryan Moulder allicin gets released from breaking the cell walls of the garlic, so grating it finely makes it more intense, however the half-life of allicin during cooking is so short so the pungency dissapears quickly unless the garlic stays raw

I went ahead and made this for dinner. Had everything at home for it but anchovies, so I used roughly the same volume of oyster sauce, and crans instead of raisins. Thank you for helping me make all of my friends make awkward sex noises from eating these!

are the cranberries really apparent in the dish? I'm not a huge fan of dried fruit components and I was wondering if it had a weak presence so that I can follow the recipe accordingly or add less or not add any at all!

@@ntlespino I didn't put in as much as the recipe called for so I didn't find the sweetness to be overtaking, occasionally would get bits of it and it was pleasant as long as I kept it minimal! That's just my personal preference with fruit in my savory dishes, guests thought it was a little weird but not necessarily unpleasant

I tried this today! And although I didn't find anchovies + I had to do a sour cream replacement ( plain yogurt + lemon juice + a little bit of vinegar) it absolutely, absolutely tastes amazing!! We had the whole family for dinner and they were absolutely in love with the dish that everyone had a second serve!! Bon appetit became my go-to website/youtube account for cooking! You guys are amazing +made me actually enjoy cooking because of all the science references and explanations lol!

Love the episode. The burner that ticks needs the ceramic cap re-seated into proper position. It's possible it was jostled or swapped with a smaller ceramic cap from another burner during cleaning. 10 second fix.

This is the first time in my life I’ve achieved smashed instead of exploded and/or slightly squished potatoes - thank you so much for the “other pan” technique! I haven’t even tried the walnut sauce yet, and it looks absolutely phenomenal, but I’m so excited to have had smashed roasted potatoes with supper! Thank you!

Great recipe. Four suggestions. 1) It's not the "little pieces" of walnuts that create a burning problem during cooking, but rather the crumbs that result when you chop them. Suggestion: pick through the cut walnuts by hand and leave the crumbs behind. 2) 450 is a hot oven and the bottoms of the potatoes can burn, even if you are using a professional baking sheet. Suggest that you flip the potatoes about halfway through the roasting time. You still get really crispy potatoes without burned bottoms. 3) The raisins are great, but I like the earlier suggestion of replacing the raisins with something else sweet. I'm going to try a fig jam or spread. 4) The salted water for boiling the potatoes is no big deal. Thomas Keller long ago extolled the benefits of salting for veggie prep. Thanks for a wonderful dish!
