Bon Appétit Test Kitchen Manager Brad Leone is back for Episode 26 of "It's Alive," and this time he's tackling the fermentation classic: sourdough bread. Brad is joined by Bon Appétit's own Claire Saffitz, Senior Food Editor and baker extraordinaire to guide him on this journey.
Join Bon Appétit test kitchen manager, Brad Leone, on a wild, roundabout and marginally scientific adventure exploring fermented foods and more. From cultured butter and kombucha, to kimchi and miso, to beer and tepache, learn how to make fermented and live foods yourself.

Chocolate tempering and some of the other parts of her projects should totally fall in line with being a pastry chef. I'm always shocked by how little she knows and how much she cheats at confectionaries.

Being a pastry chef doesn't automatically qualify you to be a baker. Sure, you know a lot of the techniques, but bread and pastries are quite different and both fields are very broad. It's like being a chef and a butcher - just because you know how to cook meat, doesn't mean you know how to butcher a pig. While both have overlaps, they require both quite distinct knowledge.

In highschool I remember this one time where we had a starter that would be passed along from person to person, and each person would feed it for like a week or something and then take a little from it to make something with and then pass it along to the next person. things don't need to cost more, people already have a hard enough time affording to eat (and live). a) a lot of these things are automated these days and don't take the amount of labour this video shows. mass production exists and it is everywhere. and b) it's the companies and ceos taking more profit than they need to line their pockets while the manual workers make next to minimum wage.

"Anyone else watching this during Covid 19 quarantine?" Sort by Newest First above. "Maybe learning to make bread will help kill my boredom" "Bake with Jack" is more informative, less wasteful, and more entertaining. His videos 115 and 101 are good beginnings for sourdough starter and sourdough bread. Well, maybe not more entertaining, there seems to be a soap opera theme to this video.

DebunkeDescant no I think bi-weekly is every 2 weeks, or twice a month. for example: I get paid bi-weekly. that's a pay check every 2 weeks. so I bi-monthly would be every 2 months. it's also in the name: "bi" means 2 and it attaches to the time period. so bi-monthly should be 2 month intervals.

My mom was born in the city of Kayseri in Anatolia (central 🇹🇷Turkey 🇹🇷). When she was a child, there was a bakery on her street that baked bread and other baked goods in a big brick oven fired by wood. They used machinery to mix the dough, but when there was a power outage, the owner would jump into the tub and start walking on it, mixing it with his bare feet and hairy legs! 🤢 When people asked him if his feet were dirty, he would say that they had been sitting in his socks all day, much cleaner than his hands that he would use to sell/give bread with, but he had washed them that morning and put on new socks the day before... My grandmother was not convinced, so she would not send my mom to the bakery and she would stop buying bread for a few days to make sure that the batch of dough that had been mixed with the owner's feet would sell eventually. This is a true story that my mom told me that took place in the 1950s.
