涼瓜炆黃菇魚
材料:
急凍野生黃菇魚扒1件
泰國苦瓜2條
豆豉15粒
蒜頭4粒
辣椒仔1隻
薑4片
處理:
1. 魚扒,清水解凍。
2. 苦瓜,清水洗乾淨,去籽,切細塊。
3. 豆豉,清水洗乾淨。
4. 蒜頭,去皮。
5. 辣椒仔,清水洗乾淨,切粒。
6. 薑,去皮,切片。
7. 魚扒已解凍,打鱗,清水清洗乾淨,擎乾水,廚紙索乾。
8. 在魚扒上灑上少許鹽。
9. 預備醬汁:
a. 蠔油半湯匙
b. 生抽半湯匙
c. 生粉半湯匙
d. 糖半湯匙
e. 胡椒粉適量
加入清水200毫升,攪勻。
烹調:
1. 大火在鑊中燒熱油1湯匙。
2. 放魚扒落鑊煎香。
3. 魚扒,兩面都已煎至金黃色,擎乾油,放碟上。
4. 爆香薑片、蒜頭及豆豉。
5. 加入苦瓜炒香。
6. 加入醬汁。
7. 放魚扒在鑊中心,大火滾起,轉中火,冚蓋,炆3分鐘。
8. 轉大火至完全滾起。
9. 完成,上碟,灑上辣椒粒。
10. 可享用。
Braised yellow weakfish steak with bitter melon
Ingredients:
Frozen yellow weakfish steak
Bitter melon 2 Nos.
Preserved beans 15 Nos.
Garlics 4 Nos.
Chili 1 No.
Ginger 4 slices
Preparation:
1. The fish steak, defrost in tap water.
2. Bitter melon, rinse with tap water. Remove seeds. Cut in small pieces.
3. Preserved beans, rinse with tap water.
4. Garlics, get them peeled.
5. The chili, rinse with tap water. Dice in cubes.
6. Ginger, get it peeled and sliced.
7. The fish has been defrosted, get it scaled. Rinse thoroughly. Drain. Dry with kitchen towels.
8. Put little salt on top of the fish.
9. Prepare sauce:
a. Oyster sauce 0.5 tbsp
b. Light soya sauce 0.5 tbsp
c. Tapioca starch 0.5 tbsp
d. Sugar 0.5 tbsp
e. Pepper appropriate amount
Add in 200ml of water. Mix well.
Steps:
1. Heat up 1 tbsp of oil at high flame in wok.
2. Put fish in wok, fry well.
3. The fish, both sides have been fried into golden yellow, drain the oil. Put on plate.
4. Fry ginger, garlics and preserved beans well.
5. Add in bitter melon, fry well.
6. Add in the sauce.
7. Put fish at the centre of the wok. Heat up at high flame. Turn to medium flame. Cover up the wok. Braise for 3 minutes.
8. Turn to high flame until it boils up.
9. Complete. Put on plate. Put chili cubes on top.
10. Serve.
