Chirbuli is a culinary masterpiece of Georgian cuisine that will make your breakfast special. It would seem, just eggs with a sauce of tomatoes and walnuts seasoned with herbs and spices but as a result a true miracle of culinary - chirbuli - comes out and it can be called «fried eggs of my dream»!
Ingredients:
• eggs - 6
• walnuts - 40 g
• crushed tomatoes - 400 ml
• onion - 140 g
• garlic - 2 cloves
• butter - 50 g
• water - 150 ml
• fresh parsley - 10 g
• fresh cilantro - 10 g
• red chili flakes - 1 tsp
• utsho suneli - 1 tsp
• imeretian saffron - 1 tsp
• ground black pepper - to taste
• salt - to taste
You will need:
• pan
• carving board
Preparation:
1. Soak the cleaned walnuts in hot water for 10 minutes and pare the rind then.
2. Heat a pan with the butter and fry the onion, cut into half rings, over medium heat for 4-5 minutes until readiness.
3. Add the utsho suneli, imeretian saffron, chopped tomatoes and salt, stir and fry over medium heat for 2 minutes.
4. Add then the chopped up walnuts, stir and fry over medium heat for 2 minutes.
5. Add 6 eggs into spaces made by a spatula apart from one another, salt and pepper to taste, fry over medium heat for 4-5 minutes with the lid covered until readiness.
6. Switch the heat off, sprinkle with the minced garlic and chopped fresh parsley and cilantro.
7. Serve your chirbuli fried eggs hot in the pan.
Advices:
1. Serve chirbuli with fresh lavash, greens and vegetables.
2. If do not remove rind of walnuts, a sauce comes out dark and lightly bitter.
3. It is important to not fry eggs too long, yolks should be runny.
