Isn't this dosing method introducing oxygen to the beer?

Yea, your right. but for the movie to fix that it's slightly messy. I have rigged up a device to do it properly. With their equipment, all one has to do is to attach to a pressurized keg after adding your finings or anything else that you need to dissolve in the beer when it partly forces its way into the bottle and then gently crack the lid until foam exists. Disconnect from the keg, rinse the whole lot if you wish and drive it into a waiting ready keg with slightly more pressure. Wish it was not bloody expensive, but I will probably fold on that later.

It's what we call BrewClear and is a finings agent designed to work with cold beer. It's technical name is Colloidal Silicon Dioxide. We've found it does the best job at rapidly dropping sediment out of the beer post chilling. Another cool side effect of this is that it also drops out a significant amount of gluten. We have a umber of coeliac's across the country that drink our clarified beer with zero gut issues
