That wasn't a Summer, Spring or even Autumn roll. Nigella made a soggy, wet brown Winter roll. She killed that recipe and made me feel dead inside.

Soy sauce is a East Asian thing. South East Asia mostly fish sauce. South Asia is more about dried spices. West Asia I don't know.

​@@woundedoneEven then not every dish from certain asia contained that ine ingredient. Country like Japan who use soy sauce doesn't used it in all their food, same with Korean. Even in SEA where fish sauce is common, most if them doesn't use it. This is just too stupid, it's the equivalent to add your cereal soy sauce and says it from asian.

100%! I’m Korean, and my mom even gives a major side eye if I buy Japanese soy sauce or another East Asian ingredient. If I made a grilled cheese and used sesame oil to cook it, and soy sauce to “flavor it,” she might disown me. JK

The part that kills me the most is TV chefs like Lawson inspire people to cook like them. You know there are thousands of British people out there either recreating this sad recipe, or worse, adding their own "creative twists" and making spaghetti and fried popcorn shrimp spring rolls. They'll make these abominations, then think, "This is authentic Vietnamese food, and it doesn't taste or look good. I guess I don't like Vietnamese food."

I've never used rice paper before, never had a roll like that before, and had no idea it needed to be rehydrated in the first place, and it was still very obvious that you'd only want to moisten it, not soak it.

Usually with these types of videos, they try to dumb it down, make shortcuts and substitutions so its easier for non-Asian folks to replicate. This video somehow added extra steps, made it more difficult to make and eat, used noodles that are probably harder to find than plain rice noodles, and couldn't bother to buy some pre-cooked cocktail shrimp. Its obvious these people have never tried a real spring roll themselves.

Growing up from an Asian household, I did compare rolling a burrito/chicken-wrap to that of an egg-roll/summer-roll at work. That's only because I learn the latter first prior the former. I give respect for both cuisine though, because I love the spice/flavor/texture that both take into consideration in making of a dish. 🙂

@@DannyBedo True that, I'm struggling with Japanese's Tamagoyaki and French Omelette on the side of "egg" rolls because I always skimping on the technique (medium-low heat, too much egg mixture base on size of pan, put down another layer of fat after each portion/roll). I should know better.

I do prefer it whole, but when you're out with friends and want to share an appetizer, cutting them in half makes it convenient. What bothers me more is that she is cutting them in pieces and have all the contents spill out. They're not even bite sized as they are still biting them and getting noodles everywhere! wtf doesn't make sense in any way.

@@etatauri There's certainly a time and a place where cutting them is fine - sharing, for kids, and (in my case) if you can't find the right size rice paper and end up with something too big! This...was NOT one of those times!

i will never understand when a professional chef cooks another cultures dish why they never research it, in these days of information on everything being available all the time how can you not take a bit of time and do it right. and with online ordering access to proper ingredients has never been better.

The BBC gives their chefs a recipe to follow and the ingredients to make the dish; if she was working with them, this is the first time she has ever come into contact with rice paper. The researchers don't think about cultural authenticity, but rather how they can make this look achievable with British supermarket ingredients, as this will draw in more viewers.

Reason you dont hold the knife on the way she does, is because it causes strain. Proper knife technique can reduce chance of getting carpal tunnel.

That soaked rice paper is giving me nightmares even I learned it the hard way when making spring rolls at home you gotta work quick when using rice paper no distractions.

The pork and shrimp spring roll uses a hoisin and peanut butter sauce with crushed peanuts on top. or go old school and use tapioca paste (cooked and is translucent) as a thickener instead of peanut butter. Other Vietnamese rolls do use the table fish sauce.

To be fair to Nigella, she's not a trained chef, she's a home cook who loves to eat. Still, major screw-up with the soy sauce, but watching Kay using raw rice in fried rice is still the worst crime of western person vs Asian food.

In summer/fresh rolls you have two cardinal rules - 1. (for filling) white is right and for finished product fat not flat... and cutting is only in half for only presentation/aesthetic purposes.

Here in Malaysia, some Vietnam rolls does use the transparent noodle. I don't know why maybe because that rice noodle is too common for us so that transparent noodle become the replacement and I hate those transparent noodles. Not really taste good for me.

Oh dear and dio mio! I used to live and work in a Chinese/Vietnamese community in Boston. Fresh spring rolls are a favorite, so I paid close attention to my coworkers lunches, brilliant cooks all. Now, I live in the woods and still crave a fix. After many attempts at home, I finally nailed it. Yup, that rice paper sheet needs seconds. The vermicelli needs chew. And the key tip-roll tightly, and wrap tightly in plastic wrap ASAP if not enjoying right away. It will firm the roll, better for dipping. And do NOT use Italian basil. Drive wherever you need to, or grow your own, but use fresh Thai basil and fresh mint.

I made summer roll as a kid for gatherings or picnics. It's a nice cool finger food, a break from the usual fried foods with nice fresh ingredients. What she made looks pretty disgusting ngl.

You don't even need to completely soak the rice paper in water, that's already too much even with 0.5s. Just wet your fingers & rub them on the paper. Some newer type of rice paper even said "no need to rehydrate" on the package. The warm ingredients will soften the paper after you done rolling.

I've been eating spring rolls my whole life and I have something to say about this. 1. No vinegar, no matter what sauce you do, just lime. 2. Rice noodle is naturally a little bit sour already, so with soy sauce and vinegar in it, it's gonna be sour as f***. 3. You don't necessarily drown rice paper in water, just spread some water on it with your fingers and it's gonna soften immediately as it rehydrates super quickly. You don't want the rice paper to break when you roll it. 4. Highly recommend making the sauce with some fish sauce, sugar, lime, MSG, garlic and chilies, it can literally go with any types of spring rolls, besides vegetarian rolls. 5. If you can, don't cut the roll, just eat it whole because it dries up real fast. Yeah I live in the southwest side of Vietnam so things can be a little different in other places. However, I believe we all know that the thing Nigella did wasn't spring roll at all, just some random rice paper with herbs and mung bean noodle s****.

This was dead as soon as she used the wrong noodles. I don't understand how Western cooks can mess the kind of noodles that should be used. I get that substitutions are sometimes necessary, but that's for stuff like shallots and mushrooms. Noodles are often too fundamental an ingredient that you just can't switch it out for something else (a la Jamie Oliver's ramen/soba).

Tbf, if she thinks spring rolls are difficult, she should leave the kitchen like right then. Spring rolls are something a 12 year old can do if taught by their parents. They might not make it beautifully but the taste almost never fails.

what amazes me is that somebody who presents herself as "chef" willingly uploaded this for everyone to see. During the whole process she didn't think about a second take or anything. She just went with the flow and presented this as a professional result.

So a couple of things worth noting: besides a more acidic fish sauce as a dip, the peanut sauce is made from hoisin sauce, peanut butter, and a bit of the blanching water after blanching the protein to thin it out. Lastly, a bit of toasted peanuts on top as garnish. Also, certain summer rolls are sliced into thirds or quarters for presentation purposes only, typically in family gatherings and parties. But traditional summer rolls are left in their full length

Nigella said you can't get thai basil everywhere but this is a lie. During my 3rd year at university, i bought a thai basil plant in a supermarket called asda and they're everywhere in the uk. Loved raising a plant for me to eat

There is another way of serving summer rolls that you'll typically see in Vietnamese households where diners are served with just the ingredients and sauce. The point is that everyone will make their own rolls using whatever combination of ingredients they prefer, and that'll be part of the dining experience.

The key word is dipping . Dipping with whatever you want at home , is fine . It's another matter if dropping it in the assembly like some tossed salad , like she did .

I guess someone miss up spring roll and summer roll when they were visiting VN. Only VNese cut spring roll and it is only when they eat it with rice rice vermicelli. And VNese spring roll use booth both of those noodles. Depend on what they prefer.

now as an asian i don't know why British chef always fucked up when making asian dishes even when some of dishes are so simple it's like they're intentionally fucking it up just to let uncle roger roast them😂

Most likely they not making asian dish , they making ancestors handed down recipe from people that cant read , and it get filter by the tv studio staffer level by leyer, getting more wrong down the process, the the chef even went they know how to cook , they had to work with 😅😅😅 what was given to them and follow the wth recipe, so ya can you think of a way to not fuck up in this case .. this been going on for generations so it can only get worse

You don't need to soap the whole rice paper in water. You just need to soap your hand into water and rub the water around the rice paper both side. That's enough water to rehydrate. You soap the whole thing it gonna be too wet and break easily when you try to roll. That's the way my mom taught me

Obviously, I check with the restaurant, but I am safer in Korean, Indian, and Thai restaurants because they don't use Soy in everything. I have a moderate soy allergy, and it is a nightmare for obvious reasons. I am less safe in the UK/I have fewer options when Western-trained chefs keep putting soy sauce in dishes it doesn't belong in; just leave it out when it doesn't belong, so your Tom Yum Soup doesn't taste itchy.

Liquid in Spring rolls would turn it into mush. Like as a Western born Brit don't get me wrong I like my soy sauce but for spring rolls I use it as a dip not put it inside. Spring rolls should be crispy on the outside and not soggy. Even soft Vietnamese you do not put soy sauce in it. It would break apart the casing.

The reason we pick herbs is to preserve the shape of the leaves. Using scissors to cut herbs pretty much destroys the leaves, making them not ideal for garnishing and topping.

I am just waiting for these top chefs, tv-chefs and all the others to try to cook Nordic cuisine. Great channel! Cheers from southern Italy, where nobody fucxs with the food. 🙂But of course, there are exceptions. I am born in the 60's and disregarding whatever you were aiming to be, you were always prepared to be fuxxing terrified of the master, chefs, gardeners and so on. It does not exist today of course. I grew up with learning by fear, and I am not saying that is the correct way. But at least, I am not turning up at an interview with blue hair, tatooes and no knowledge, and then don't understand why I did not get the job. Everything is about parenting of course. Once again, great channel.

Anyone who has eaten an extensive amount of Asian food and gives a f**** about what they are eating knows the difference between rice noodles and starch noodles. Heck, if you ever have eaten an extensive amount of Vietnamese food, you know the ingredients to make this dish: rice wraps, thai basil or betel leaf, lettuce, shrimp or pork primarily(I have had versions with crab and mango), sometimes carrots, sometimes Cucumber, sometimes mint, cilantro, and either peanut sauce, tamarind sauce, or plum sauce(mostly I've seen the tamarind sauce with ground peanuts). How did they get this so wrong?

These "celebrity chef" types really infuriate me 🤦‍♀ I used rice paper for the *very first time* a couple days ago to make some summer roll type things. Loaded it up with seasoned rice, avocado and prawns. They certainly weren't lookers because I overfilled them and I had zero rolling technique. Real "face only a mother could love" vibes, but even *I* knew you have to wet the rice paper really briefly otherwise it just falls apart on you. A famous "chef" with several cook books out, her own TV show and everything else and she doesn't know to wet the paper really quickly, tuck the ends in while rolling, DON'T cut the roll after etc etc. It's utterly wild. I'm definitely no chef, but these people missing even the fundamentals is just crazy to me.

that's how i used to do rolls when i was 7 or 8, throw everything in and eat it however i want that maybe still delicious (by her standard) but not because she's good, it's because the dish is meant to be good regardless of the edible ingredients you have on hand
